Roasted Red Pepper Bruschetta with Feta is the first starter and ridiculously easy to make. These little appetizers can be made on game day. Purchase a jar of red pepper bruschetta, feta cheese and bruschettini toasts. The toasts come in a variety of flavors and great to have on hand. Both items are available in your local markets. You can make as many of these little gems as you need. Lay toasts on a serving platter, dollop 1 t. of red pepper on toasts and top with crumbled feta cheese. Sprinkle with fresh parsley if desired and serve.

Next is my Spicy Bacon and Blue Cheese Dip and let me tell you how addictive this dip is. If I were you I’d say to double the recipe because leftovers are a good thing. You might even finding your guests asking for the recipe. I use whipped cream cheese because no coming to room temperature to soften is required.

Mix in sour cream and crumbled blue cheese of choice along with bacon and the spicy ranch dressing mix. The dressing mix is what gives this dip a slight spicy kick as even kids will eat this dip. Creamy with that bite of blue cheese but not overwhelming, bits of bacon and scallions. Serve this scrumptious dip with celery sticks or sea salt pita chips. You’ll be back for seconds and thirds, I promise.

Last but not least by any means is my Sun-Dried Tomato Feta Dip. Crumbled feta, sour cream and mayonnaise are the base. Toss in minced sun-dried tomato (not in oil), lemon juice, garlic, sambal oelek (red chile paste), and herbs. Be sure to allow this dip to sit to meld flavors and soften tomatoes. By the way, the sambal is spicy so start out with what I have written in the recipe then add more if desired. The tomatoes are wonderful with a touch of sweetness. Again, serve with toasts or veggies of choice.

Roasted Pepper Bruschetta with Feta

1 package Bruschettini toasts, olive oil or garlic & parsley

1 jar Roasted Red Pepper bruschetta

Feta cheese, crumbled

Chopped fresh parsley, for sprinkling (optional)

 

Lay toasts on a flat serving dish and dollop 1 t. pepper bruschetta on each toast. Top each with crumbled Feta and sprinkle on parsley if desired.

 

Spicy Bacon Blue Cheese Dip

4 oz. whipped cream cheese

½ cup sour cream

½ cup crumbled blue cheese

1 T. Spicy Hidden Valley Ranch Dressing Mix

¼ t. onion powder

¼ cup chopped cooked bacon

3 T. chopped chives or ¼ cup chopped scallions

 

In a medium bowl, combine all ingredients. Refrigerate for at least 1 hour before serving. Serve with crackers, toasts, or veggies.

Makes 2 cups.

 

Sun-Dried Tomato Feta Dip

½ cup crumbled Feta cheese

¼ cup Duke’s mayonnaise

¼ cup sour cream

1 t. fresh lemon juice

1 t. finely minced garlic

1 to 2 t. sambal oelek (red chile paste)

5 to 6 sun-dried tomatoes, finely chopped

1/8 t. ground thyme

1/8 t. dried dill

1/8 t. dried oregano

Salt and freshly ground black pepper to taste

Paprika, for sprinkling

 

In a medium bowl, combine all ingredients except salt and pepper. Adjust seasoning and refrigerate for at least 1 hour before serving.

Serve with pita chips, toasts, or veggies.

Makes 2 cups.
