Find Sunday mornings the day for a different breakfast item? I do and this particular day my husband asked for something he hardly ever asks for, my Almond Coffee Cake. Trust me, I had to go digging for this recipe as it has been a while for coffee cake. Once made and baked I wonder why this recipe was not in my breakfast rotations. One taste and that said recipe has moved to the right spot in my recipe box.

So, what makes my Almond Coffee Cake so special? Several things apply here like how moist and full of almond flavor this coffee cake is. Next would be how easy this recipe is to make and the fact it comes together in few bowls. Hey, I say the less dishes the better. Spread part of batter in a 9-inch cake pan, and sprinkle on filling made of sugar, sliced almonds, and cinnamon. Repeat process one more time, pressing filling into batter a bit. Now bake and then let cool before serving.

Bake my Almond Coffee Cake to share and impress with delight. Make sure you have plenty of coffee and tea available as this scrumptious offering goes together marvelously. Keep this recipe handy because I bet it will be added to your breakfast rotations. Nothing smells as wonderful as something baking in the oven.

Almond Coffee Cake
1/2 cup salted butter (1 stick), softened
1 cup granulated sugar
2 large eggs
1 cup sour cream
1 t. pure vanilla extract
1 1/4 t. pure almond extract
2 cups unbleached all-purpose flour
1 t. baking powder
1 t. baking soda
1/4 t. kosher salt
Filling and Topping:
1/2 cup granulated sugar
1/3 cup sliced almonds
1 t. ground cinnamon
Heat oven to 325 degrees. In a small bowl, mix filling and topping ingredients; set aside.
In a large mixing bowl, mix thoroughly butter and sugar until creamy.
Add in eggs, one at a time, mixing well after each and then stir in vanilla and almond extracts.
Using a separate bowl, whisk together flour, baking powder, soda, and salt.
Stir flour mixture into wet ingredients just until smooth.
Spray a 9-inch cake pan with Bakers Joy flour spray.
Spread one-half the batter into cake pan. Sprinkle 2/3 of filling and topping mixture evenly over batter.
Spread remaining batter over filling and sprinkle remaining filling mixture over batter. Lightly press topping into batter.
Bake for 40 to 45 minutes or until cake tester inserted comes out clean.
Allow cake to cool 15 minutes in pan on wire rack before serving.
