“American and Cream Cheese Mini Bagels”

Today was a foggy and drizzly. Is drizzly a word? Well it is now because today was a not so pretty day outside. Listening to the weather forecast, it would seem the weekend is going to be the same. That means your kids will be inside hence you may hear them yelling, “Mom I’m hungry or can I have a snack?” Am I right? I just bet I’m spot on so I have an easy snack you can whip up in a jiffy for the munchkins as well as for yourself. Try American and Cream Cheese Mini Bagels on for size. Warm creamy cream cheese and melted american cheese broiled to golden brown goodness…yum!

Years ago when I was a struggling college student, my roommate showed me how to make these one night while doing homework. These little bagel treats became part of our breakfast and snack routine more often than not. They’re cheap to make and I will assume you have american and cream cheese in your refrigerator.

American and Cream Cheese Mini Bagels

Mini Bagels can be found in the bread aisle or fresh-baked goods section of your local supermarket. They can be used for appetizers or make small sandwiches for your kid’s school lunches. But as the adult, don’t leave yourself out because uses are endless. Nothing fancy but fun and you can make as many as you want.

So to make American and Cream Cheese Mini Bagels is simple. Split bagels in half. They’re usually already cut for you. Turn on your broiler, smear a generous amount of whipped cream cheese on each bagel half. Cut american cheese slices in half and place a half slice on top of cream cheese. Place bagels on baking sheet under broiler until bubbly and golden brown; then remove and serve. Toasty brown, ooey, gooey cheesy goodness. I’d say that’s perfect for a weekend or after school snack.

American and Cream Cheese Mini Bagels

Mini Bagels, cut in half

Whipped cream cheese

American cheese slices

Turn on broiler to 500 degrees. Smear a generous amount of cream cheese on each bagel half. Cut American cheese slices in half then place a half slice on top of cream cheese. Place bagels on baking sheet under broiler until bubbly and golden brown. Remove from oven to serving plate.
