“Bacon Egg and Cheese Breakfast Sandwiches”

How about an old school breakfast? Do you remember Mom making you eat breakfast before leaving for school? Move over Mickey D’s because your breakfast has nothing on mine. Mom had breakfast for us each morning before school. Sometimes she would make special treats for breakfast like her Bacon Egg and Cheese Breakfast Sandwiches. This sandwich was also one of my Dad’s favorites, too.

So quick and easy…made with crispy bacon, fried eggs topped with melting American cheese, and optional tomato slices. Place this luscious middle on your favorite toast laden with mayonnaise. I love my eggs over easy so the yolk runs and tomato slices are a tasty addition especially a good ripe tomato. So darn good…

Bacon Egg and Cheese Breakfast Sandwiches

6 slices bacon

4 eggs

4 slices American cheese

4 slices of your favorite bread

Mayonnaise

Tomato slices, optional

Salt and pepper to taste

In a large skillet, cook bacon as desired. Remove from skillet; drain on paper towel and set aside. Remove all but 1 T. bacon fat and fry eggs as desired, sprinkling with salt and pepper to taste (I like over easy so the yolk runs). Place cheese slice on each egg while in skillet. Remove eggs from heat. Meanwhile, place bread slices in toaster until golden brown.

To build your sandwich, spread toast with mayonnaise, add an egg, 3 strips bacon, and another egg then add tomatoes and top with toast. Slice in half and serve.
