“Bacon Hash Brown Skillet”

With crazy work schedules, finding time to spend with the ones you love is difficult at best. So when you do find time, preparing favorite meals is so much fun. So this Valentine’s day, I had the opportunity to cook a great breakfast for my husband. Bacon Hash Brown Skillet was on the menu much to the hubby’s liking.

This recipe starts with bacon (I used garlic bacon found in markets selling European meats), onion, mushrooms, and hash browns, Make holes in the hash browns, place eggs in holes, garnish with cheddar cheese and green onion. Serve with fresh fruit and toast. This dish can be made for brunch. Be creative; use any other breakfast meat like sausage, ham, chorizo or no meat at all. You can easily make this meal vegetarian. Bacon Hash Brown Skillet

6 slices garlic bacon or your favorite brand bacon

1 – 8oz. pkg. mushrooms, sliced, if large slices, cut slices in half

1 small onion, coarsely chopped

1 – 20oz. pkg. Simply Potatoes Shredded Hash Browns

2 T. Butter, if needed

Salt and pepper to taste

6 eggs

1 cup cheddar cheese

Green onion, for garnish

Cook bacon in large nonstick skillet on medium heat until crisp or desired doneness. Remove bacon from skillet, reserving 3 Tbsp. drippings in skillet. Drain bacon on paper towels. If using garlic bacon, not as much fat as in regular bacon, add 2 T. butter to skillet.

Add mushrooms, onions and potatoes to skillet; cover. Cook on medium-high heat 15 min. or until potatoes are browned, stirring occasionally. Add bacon back to skillet; salt and pepper to taste.

Make 6 small wells in potato mixture; fill wells with eggs. Cook, covered, 3 to 4 min. or until egg whites are firm and yolks are cooked to desired doneness. Sprinkle on cheddar cheese. Cover until cheese melts; remove from heat. Let stand, covered, 1 min. before serving. Sprinkle top with green onions, serve with toast and fresh fruit.
