Bacon Mascarpone Stuffed Mushrooms

12-14 large white button mushrooms

1 – 8 oz. container Mascarpone cheese, softened

1/3 cup chopped cooked bacon

2 T. panko breadcrumbs

1/2 t. kosher salt plus additional for sprinkling on mushrooms

1 green onion, white and green parts, chopped

2 T. grated Parmesan cheese

Preheat oven to 350 degrees. Wash and remove stems from mushrooms. Lay mushrooms on paper towels to dry.

In a medium mixing bowl, stir Mascarpone cheese with fork until smooth. Add in bacon, breadcrumbs, salt, green onions, and Parmesan cheese. Mix until well combined. Adjust seasoning if necessary.

Sprinkle inside of mushrooms lightly with kosher salt. Using a teaspoon, divide and mound cheese filling evenly among mushroom caps. Place mushrooms in desired baking dish. Bake at 350 degrees for 40 minutes or until filling and mushrooms are golden brown. Remove to serving dish and enjoy.
