Amazing what happens when you start clearing out the pantry. You start looking at expiration dates on things purchased for another occasion never getting around to using them. Funny how that happens? Well, you’re not alone if this happens to you as life just happens and life at that moment gets shoved to the side. No harm done as this recipe was created in a forgotten moment in time, my Baked Cherry Taquitos. Guaranteed to be a kid favorite but we adults will be glad to indulge.
Baked Cherry Taquitos
I found a can of cherry pie filling I purchased for a french toast bake and then I found a package of flour tortillas leftover from breakfast several days earlier. I had seen a recipe for apple taquitos on Pinterest some time ago. Never made the apple ones but that recipe popped in my head. So I thought how easy would it be to create a similar recipe but using cherry pie filling. I’m not a huge fan of apple pie filling so if I ever created a recipe using apples they would be filled with fresh apples. However, I know exactly what to add to cherry filling for just the right flavors.
Baked Cherry Taquitos
How you make these little babies couldn’t be simpler. I bet you could even get the kiddos involved especially if they know dessert is for them. My Baked Cherry Taquitos are not super sweet. Feel free to use less sugar if you like as the additional sugar is sprinkled on once ready to bake. Tortillas resembles pie crust once baked. Most important is no frying means less fat. Let’s get on with the recipe.
Baked Cherry Taquitos
First, melt 1 T.butter while cherry pie filling is mixed with 1/4 t. ground nutmeg, 1 T. sugar, and 1/2 t. fresh lemon juice. Using regular size flour tortillas, place about 2 T. pie filling on one side of tortilla. Second, begin rolling tightly into a long tube and place tortilla seam-side down in a buttered 13×9-inch baking dish. Continue with the rest of the pie filling and tortillas. My recipe makes about 12 – 14 taquitos. Third, all tortillas have been rolled, brush taquitos with 1/4 cup melted butter and sprinkle with cinnamon sugar mixture. Place baking pan in 350 degree oven and bake for 15 – 20 minutes until lightly browned and bubbly. Cool to room temperature, serving with whipped cream. Told you quick, easy, fun and delicious.

Baked Cherry Taquitos
1 can cherry pie filling (I use Lucky Leaf)
1/2 t. fresh lemon juice
1/4 t. ground nutmeg
1 T. granulated sugar
1/4 cup melted butter plus 1 T. for greasing baking pan
1/2 cup granulated sugar
1 t. ground cinnamon
12 – 14 flour tortillas
Heat oven to 350 degrees. In a medium mixing bowl, combine pie filling, lemon juice, nutmeg, and 1 T. sugar.
Melt butter and brush inside of a 13×9-inch baking pan.
Starting with one tortilla, spread about 2 T. pie filling onto one side of a flour tortilla. On fruit side, begin rolling into a long tube. Place taquito seam side down in buttered baking pan. Continue with rest of flour tortillas.
Re-melt butter if necessary and brush top and sides of taquitos.
Mix 1/2 cup sugar and cinnamon together. Sprinkle cinnamon-sugar mixture on top of taquitos.
Bake at 350 degrees for 20 – 25 minutes until lightly brown and bubbly.
Serve at room temperature with whipped cream.
