Beef Stroganoff…another family favorite. Even my Dad would eat this dish. My Dad is a meat and potatoes kind of guy, while my Mom, sister and I were adventurous with our food. Dad was not. It was not uncommon for my Mom to cook two different meals to satisfy his taste buds. How crazy when I look back on those days. Once I learned how to make Beef Stroganoff, Dad would ask when I would be making it again. I was astounded and happy. Finally I was making something he liked besides a dessert.
Love my days off when I can make something I love and haven’t made in a while. My Beef Stroganoff is made of tender beef and mushrooms in a sour cream sauce. Beef, onion and mushrooms simmer for an hour in beef broth with Worcestershire sauce for about 1 hour. Add sour cream and heavy cream, serve over hot egg noodles. Oh boy, comfort food at its finest. Special enough to serve dinner for friends or special occasions. Another great, fast and easy weeknight meal. Make Beef Stroganoff a day ahead…just warm it up and serve. Dinner in minutes, Voi la!
Beef Stroganoff
2 T. butter or olive oil
2 pounds sirloin or round steak, cut into 1 inch cubes
8 oz. pkg. sliced mushrooms
1 medium onion, coarsely chopped
2 garlic cloves, finely chopped
4 T. Worcestershire sauce
1 ½ cups water, plus more if necessary
1 Knorr Beef bouillon cube
½ cup sour cream
½ cup heavy cream
1 T. cornstarch
Heat butter or olive oil in a 12 inch skillet over medium-high heat. Add beef and onion to skillet, sautéing until beef is almost browned, a little red remaining; add mushrooms and garlic. Sauté until no red remains and liquid from mushrooms has reduced by half, about 15 minutes.
Stir in Worcestershire sauce, 1 cup water or enough to barely cover beef and bouillon cube. Cover and simmer for about 1 hour or until beef is tender.
In small bowl, mix sour cream, heavy cream and cornstarch. Stir into beef and simmer until sauce thickens. If sauce gets too thick add a little water to thin. Serve beef stroganoff over hot cooked egg noodles. Enjoy with a fresh green side salad.
