Welcome to your first recipe in Little Appetites. Here’s an easy and fun breakfast idea the whole family can enjoy making for breakfast. Easy Breakfast Quesadillas couldn’t be any simpler to make. Made with flour tortillas, creamy scrambled eggs, crumbled bacon, and cheese. I know of no kid that doesn’t like cheese. Have the kids build their own breakfast by putting all ingredients in small bowls first. Each kid can add his or her own eggs, bacon and cheese. Mom help him or her fold it over and of course, no kids near the hot skillet as their quesadilla creation toasts. Remove from skillet to small plates. Breakfast Quesadillas
Breakfast Quesadillas
1/2 lb. bacon, diced
5 eggs
2 T. milk
2 T. sour cream
1 T. fresh chives
1 T. unsalted butter
Salt and pepper to taste
Cheddar cheese
Flour tortillas
In a large skillet over medium-high heat, fry bacon until desired doneness. Remove bacon onto a plate lined with paper towel. Discard fat from skillet and set bacon aside.
In a medium bowl, whisk together eggs, milk, sour cream, and chives until well combined; add salt and pepper to taste.
Return skillet to medium heat with 1 T. butter. When butter is melted, add egg mixture and bacon. Cook until creamy, 3 to 5 minutes. Remove skillet from heat.
Place flour tortillas on plate and fill with scrambled eggs on one half and top with your desired amount of cheddar cheese. Fold tortilla over and press together.
Return skillet to medium heat and place quesadillas in skillet. Cook until golden brown, about 2 to 3 minutes; flip over. Cook other side until golden brown.
Serve warm.
Note: Kids will love this easy breakfast treat. Have the kids build their own breakfast creations. You can use ham or sausage to make these quesadillas. This recipe is excellent using spinach in the egg mixture and feta or goat cheese. Have some fun!
