Kids need to be driven somewhere, parents catching up on work, running errands, laundry, etc. It never ends, does it? How about a simple breakfast for the whole family to enjoy, quick and easy. Forget the trips to Mickey D’s or other fast food chain. Make your own Brown Sugar Bacon Egg and Cheese Breakfast Sandwiches instead. Made with brown sugar bacon, fried eggs, American cheese and a bit of mayonnaise. I often add a slice of tomato and avocado to my sandwiches. All of these ingredients are placed atop toasted English muffins. I consider this recipe my version of the ultimate breakfast sandwich. The flavor of the bacon especially with brown sugar is ridiculously delicious. It’s got that salty, sweet thing going on. Sure to get you revved up in the morning. Ooey, gooey cheese and slightly runny yolks make my mouth water just thinking about it.

What makes Brown Sugar Bacon Egg and Cheese Breakfast Sandwiches so easy is some of the ingredients can be made ahead of time. I manage to cook bacon ahead for the coming week. This way all you need to do is fry your eggs, toast the muffins, slice tomato and avocado the morning you plan on preparing the sandwiches. Another fun idea is letting the kids create their own version. Don’t like flavored bacon or no bacon at all, be my guest and leave it off. The point is you get a better breakfast than fast food in addition getting to spend quality time with the family. That’s a win-win in my book. Brown Sugar Bacon Egg and Cheese Breakfast Sandwiches

4 English Muffins

Olive oil mayonnaise

8 slices brown sugar bacon

4 large eggs

4 slices American cheese

1 avocado, sliced

1 medium tomato, sliced

 

Cook bacon in a large skillet over medium-high heat or bake in 350 degree oven until crispy. Drain on paper towel and set aside until ready to assemble sandwiches.

In a skillet fry eggs until desire doneness is achieved.

Split and toast English muffin spread one half muffin with mayonnaise. Top one side of each muffin with an egg, slice of cheese, two slices of bacon, sliced avocado, sliced tomato and top with other half of English muffin.

Serve with a side of hash browns or fresh fruit.
