Since I was a little kid I have loved breakfast sausage and growing up with Bob Evans Farms 10 minutes down the road was fun. So today I’m sharing with you a favorite recipe for Brown Sugar Breakfast Sausage. Making homemade sausage is easy and will be an unexpected surprise at the breakfast table.
Brown Sugar Breakfast Sausage
Ground pork is flavored with poultry seasoning, garlic powder, anise seed, salt, pepper, and the star, brown sugar. To prepare sausage, combine all ingredients in a mixing bowl then cover and refrigerate at least two hours to overnight. The flavor of anise shines through after sitting a while and the brown sugar caramelizes during frying. Because ground pork is rather lean, add vegetable oil to the skillet before frying.

Remove sausage from refrigerator and form sausage patties into size desired. One-quarter cup measure works extremely well for a consistent size and even cooking. Fry your patties in a large non-stick skillet over medium heat for a total cooking time of about 20 minutes. Flip sausage rather often so patties don’t burn because of brown sugar added. That hint of sweet makes all the difference yet can be left out if you prefer just the savory flavor sausage.

Brown Sugar Breakfast Sausage
2 T. vegetable oil
2-pounds fresh ground pork
4 t. light brown sugar
3 t. poultry seasoning
1 t. anise seed
2 t. garlic powder
2 t. fine sea salt
2 t. ground black pepper
In a large mixing bowl, mix all ingredients with a large fork or your hands. Combine meat mixture evenly yet try not to overwork the meat.
Heat 2 T. vegetable oil in a large non-stick skillet. Shape pork patties into desired size.
Fry sausage patties until browned on each side, turning as needed so pork does not burn. Total cooking will take approximately 20 to 25 minutes and no pink remains.
Drain sausage on paper towels for one minute and serve warm with your favorite breakfast sides.
Makes about 14 to 16 sausage patties.
