“Caramelized French Onion Dip”

With Super Bowl coming in a few short days, we’re scrambling for quick and easy recipes to feed the crowd about to deluge upon your living space. Dips are most often the food of choice at Super Bowl party or any party for that matter. So how about whipping up Caramelized French Onion Dip. I guarantee you guests will not leave table where this dip is placed. This will be the place to mingle so I will also suggest making two batches and have plenty of dippers. I love serving this creamy onion dip with pita chips.

Made with diced onion and sautéed until caramelized, add in cream cheese, sour cream, hot sauce, paprika and french onion soup mix. You may want to caramelize your onions ahead of time because then it’s about mixing all ingredients together and refrigerate until ready to serve. I really like the taste of Caramelized French Onion Dip when left overnight. It’s the melding of flavors thing that goes on. Just trust me on this one, it’s delicious and a winner. So put your jerseys on and get ready for some football and say “Touchdown!”

Caramelized French Onion Dip

2 large Vidalia onions, chopped

4 T. unsalted butter

2 T. Canola oil

1/2 t. Hungarian paprika

1 t. kosher salt

2 t. cayenne pepper or more to taste

1/2 t. ground black pepper

1 – 8 oz. package cream cheese, softened

1 – 16 oz. container sour cream

2 T. Knorr French Onion Soup Recipe Mix

In a large 12-inch skillet over medium heat, melt butter in oil. Add onions to skillet and season with pepper. Lower heat and let onions caramelize, about 20 minutes. Be careful not to let onions get crispy brown. The sugars released from the onions is the caramelizing process. Don’t rush them…Remove from heat to cool; set aside.

Meanwhile, in a large bowl, beat together cream cheese and sour cream. Add in onion mix then stir in caramelized onions with spoon. Stir in paprika and cayenne pepper. Adjust seasoning if necessary.

Transfer dip to desired serving dish and refrigerate for at least 2 hours before serving.

Serve with plain or lightly salted pita chips.

Makes about 10 servings.
