Need a quick and easy side dish in a hurry? Broccoli lovers rejoice because here is a long forgotten veggie dish. My Mom made Cheesy Cheddar Broccoli Bake all the time. Using broccoli flowerets, cheddar cheese, cream of mushroom soup, and sour cream, how can you go wrong? You can’t and this casserole heats up nicely if you have leftovers. Sound like your kind of dish then read on.

You know how it is when you have no time, running late, or kids need to be somewhere. Seems like we’re always in a hurry but yet we all need to eat, right? Well this particular night I was baking chicken. Your start looking in the pantry, cabinets and refrigerator. A couple of days prior I had purchased fresh broccoli but didn’t want it steamed or plain. But I love broccoli and I looked in the pantry, saw cream of mushroom soup and bells went off in my head. I knew I had sour cream and cheddar cheese because this household is never without. Plus how can anything be bad if cheese and sour cream are involved? My thoughts exactly!

So in recreating Mom’s recipe, I cook the broccoli for a few minutes then rinse under cold water to stop the cooking. This allows broccoli to stay green in the casserole instead of that ugly green color it turns without blanching first. In a large bowl, combine sour cream, mushroom soup, cheese, and other seasonings. Now stir in broccoli and spoon into a buttered gratin baking dish, cover with foil and bake. Remove foil and bake for another few minutes until golden and bubbly.

This not a new recipe but one I think we’ve all eaten sometime in our lives. One, we forget how easy it is to throw together. I know when Mom’s recipe came to mind, I couldn’t remember the last time I had made this deliciously easy side dish. Great Side For Chicken or Pork Chops – Cheesy Cheddar Broccoli Bake

 

Cheesy Cheddar Broccoli Bake

2 large broccoli heads

1 can (10.5 oz.) cream of mushroom soup

1 cup sour cream

2 cups shredded sharp cheddar cheese

1/4 t. garlic powder

1/4 t. onion powder

 

Heat oven to 400 degrees and spray a 13×9-inch gratin dish with non-stick cooking spray or grease with butter; set aside.

Cut broccoli into flowerets and place in a large saucepan, covering broccoli with cold water. Bring water to boil and cook for 5 minutes. Drain and rinse broccoli under cold water to stop the cooking process. Drain again and set aside.

In a large mixing bowl, combine soup, sour cream. Stir in cheese, garlic, and onion powder until thoroughly mixed.

Add in broccoli, stirring until well combined. Spoon and spread broccoli mixture evenly into prepared dish.

Cover dish with foil and bake for 30 minutes. Remove foil and bake another 10 minutes until lightly browned and bubbly.

Serve hot with your favorite main dish like chicken or pork chops.
