“Cheesy Hash Brown Casserole”

Seems like some recipes just never get old. I’ve been making my Cheesy Hash Brown Casserole for years. There is a million similar recipes for this casserole out there. However, the best casserole has the right amount of cheese and the right amount of creaminess. No dry casserole here, only creamy goodness. All potato lovers, rejoice.

One restaurant comes to mind when I think of hash brown casserole, Cracker Barrel. When I lived in Ohio there were several a short distance away from where we lived. breakfast is our favorite and you always their cheesy casserole. It’s definitely a casserole that has been perfected in my house much to my husband’s delight.

Don’t You Just Love Those Crunchy Edges

Most recipes call for frozen hash browns but I like to use Simply Potatoes brand. These potatoes are not frozen and have a creamier texture used in casseroles. So to prepare my casserole I adapted the recipe from the bag and wholley moley what a dish. Grab a large mixing bowl, add in all ingredients and mix well. Spoon into a buttered 2-quart casserole dish and bake until nicely browned. Add more cheese to the top if you desire before baking and sprinkle with chopped green onion or chives. This is one of those casseroles you can play around with.

Go Ahead, Grab A Spoon and Dig In

As a family we never get tired of this creamy, cheesy potato side dish. Not a fan of mushrooms, use cream of chicken or celery instead. The results will be the same, delicious. Serve this casserole at breakfast, brunch, lunch, or dinner and with whatever you desire. Try with barbecue, fried chicken, pot roast, ribs, etc. The list is endless. It’s a tried and true recipe to put on your meal rotation planner.

 

Cheesy Hash Brown Casserole

1 package Simply Potatoes Shredded Hash Browns

1 can (10.75 oz.) cream of mushroom soup

2 cups shredded sharp cheddar cheese plus more for top, if desired

3/4 cup sour cream

1 T. dried onion flakes

1/4 cup salted butter, melted

Chopped green onion or chives, for garnish (optional)

 

Heat oven to 350 degrees. Spray a 2-quart or 11×7-inch baking dish with non-stick cooking spray. Use butter to coat dish if you desire.

In a large mixing bowl, combine all ingredients and mix well.

Spoon casserole into prepared baking dish evenly and bake for about 50 minutes or until potatoes are tender and top is browned.

 

Makes about 8 servings.
