“Chicken Fried Steak with Savory Milk Gravy”

Chilly, rainy days always mean comfort food in my book. Checkout my version of Chicken Fried Steak with Savory Milk Gravy. This recipe is not your usual fried steak recipe. The flavor is savory but with the same crispy, crust steak and the infamous white gravy most often served with this classic. What makes my recipe so different you ask?

A Taste Like No Other – Chicken Fried Steak with Savory Milk Gravy

First of all, the steak is coated in both flour and panko breadcrumbs. Panko always lends that crispy crunch to anything fried and stays crisp/. I find when food is fried at the correct temperature, panko also soaks up less oil. This is always for the better. Second, more than simple salt and pepper is used to season the breading mixture. Breading needs seasoning, too, so don’t forget. Next, the gravy has seasoning that is not normally associated with chicken fried steak. How about cayenne pepper, white pepper, ground nutmeg, and dry mustard being added? This gravy is over the top and is also out of this world with fried chicken. Such an appetizing change from your standard milk gravy, I promise you.

To make this delicious meal, coat steaks in egg wash and coat with seasoned flour breadcrumb mixture. Fry on each side until golden brown. Place steaks on a wire rack to keep from becoming soggy and any oil can drip off. gravy can be made ahead of time and kept warm then served right after steaks are fried.

The gravy is a typical white sauce base and a few savory seasonings added. I’ve added white pepper for purposes of color, cayenne pepper for slight heat, nutmeg for a touch of warmth, and dry mustard for a bit of tang. The combination of flavors is stupendous. You’ll get a whole new flavor profile than from your standard white cream gravy. Be prepared from your first forkful, a taste like no other. Creamy yet complex and savory as you’ll taste each spice and seasoning used. Chicken Fried Steak with Savory Milk Gravy

Steak:

2-pounds beef cubed steak

1 1/4 cups all-purpose flour

1/4 cup panko breadcrumbs

1 t. kosher salt

1/2 t. black pepper

1/2 t. garlic powder

1/2 t. onion powder

1/2 t. paprika

Pinch of cayenne pepper

2 eggs, beaten

4 T. Olive oil

4 T. unsalted butter

Gravy:

3 T. unsalted butter

1/2 cup all-purpose flour

1 t. kosher salt

1 t. white pepper

Pinch of cayenne pepper

Pinch of ground nutmeg

1 t. dry mustard

4 cups milk

to 4 minutes until golden.

In a shallow dish combine flour, breadcrumbs, salt, peppers, garlic, onion, and paprika. Pour eggs into another shallow dish.

Dip each cubed steak into eggs and then coat each with flour mixture. Place on a wire rack and let rest for about 10 minutes.

Meanwhile, in a large skillet over medium-high heat, melt butter mixed with oil.

Cook steaks in butter/oil about 3 to 4 minutes per side until crispy and golden brown. Remove to wire rack to keep from becoming soggy.

To prepare gravy, wipe out skillet and add in butter. Melt butter and stir in flour, cooking for about 1 minute.

Reduce heat to medium, stirring in salt, pepper, cayenne, nutmeg, and dry mustard. Pour milk in gradually, stirring constantly and until all is incorporated and smooth.

Allow gravy to simmer until thickened, about 5 minutes.

To serve, top each chicken fried steak with gravy accompanied by your favorite side dish.
