I hope this weekend has been a good one for each of you. School is back in session in one form or another for students. The struggles and triumphs of this school have only just begun. Yet like everything else in 2020, we’ll get through this together. With that said, you need a snack and the kids need a snack. A treat for a job well done for both parents and kids mean Chocolate Chip Rolo Blondies. These blondies are the perfect addictive sweet treat to end a busy day of both work and school.
Chocolate Chip Rolo Blondies
Loaded with chocolate chips combined in a buttery batter and topped Rolo caramel candies are super easy to make. No need for a mixer. All you need are the ingredients, a large mixing bowl, and a wooden spoon. I love recipes like this because of the simplicity and crazy deliciousness of something so simple. The smell as these blondies will fill your house with the most buttery aroma you’ve ever smelled as they bake.
Chocolate Chip Rolo Blondies
Start with melted butter than has cooled and stir together all wet ingredients. In a small bowl, mix together dry ingredients and add to wet ingredients. Stir in chocolate chips. Flatten half of batter into prepared baking pan. Top batter evenly with Rolo candies then flatten pieces of remaining batter on top of candy until top is completely covered. Bake, cool in pan, cut into squares and serve. .

Enjoy these gooey, sweet, buttery bars anytime. What could be better with a cup of coffee or a tall glass of milk? These blondies will no doubt become a family favorite especially with kids. Chocolate Chip Rolo Blondies
1 cup (2 sticks) unsalted butter, melted and cooled
1 1/2 cups packed light brown sugar
1/2 cup granulated sugar
2 large eggs, slightly beaten
1/4 t. pure vanilla extract
1/4 t. kosher salt
2 cups unbleached all-purpose flour
1 – 12 oz. package semi-sweet chocolate chips
1 – 10.6 oz. share-size package Rolo Caramels, about 50, unwrapped
Heat oven to 350 degrees and grease a 13×9-inch baking pan. You can use non-sticking baking spray.
In a large bowl, mix melted butter with brown and granulated sugars until smooth.
Beat in eggs and vanilla until thoroughly combined.
In a small bowl, whisk together salt and flour then add mixture to wet ingredients.
Stir in chocolate chips until evenly combined.
Press half of chocolate chip batter into prepared pan and place unwrapped Rolos on top of batter.
Flatten pieces of remaining dough on top of Rolo layer until pan is completely covered.
Bake for 25 to 30 minutes or until cake tester inserted comes out clean. Tent blondies with foil if bars are becoming to dark. They should golden brown around the edges.
Makes 24 blondies.
