Chocolate White Chocolate Chip Cookies…another rainy day recipe to get a jump-start on the new school week and a kid friendly baking activity. If you love chocolate cookies or chocolate in general, whip up a batch of Chocolate White Chocolate Chip Cookies. These cookies are not over the top chocolate but just enough to blend with and not overpower the taste of white chocolate chips in these cookies. I find these cookies are even better the next day. Easy to make and you might even have all the ingredients in your pantry already. Wouldn’t that be awesome? Get your kids involved by measuring ingredients, scooping cookies on the cookie sheets and so on. Instead of using white chocolate chips, try Lindt white chocolate candy bars, chopped coarsely into chunks and added to the cookie batter or how about some nuts. Chocolate White Chocolate Chip Cookies
Chocolate White Chocolate Chip Cookies
2 1/4 cup cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 t. baking soda
1/4 t. salt
1 cup ( 2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 t. vanilla extract
2 large eggs
2 cups Ghirardelli White Chocolate Chips
Preheat oven to 350 degrees. In a small bowl, combine flour, cocoa powder, baking soda, and salt; set aside. In a stand mixer, beat butter, sugar, brown sugar and vanilla until creamy. Add eggs, one at a time, beating well after each. Gradually beat in flour mixture. Remove bowl from mixer and stir in white chocolate chips.
Drop by teaspoon onto ungreased baking sheets. Bake for 10 – 11 minutes or center is until set. Cool on baking sheet for 1 – 2 minutes and remove to wire cooling racks to cool completely. Store in an airtight container.
