New Years Day was about football all day and snacking. My husband said he wanted a snack and reminded me of this recipe. Low and behold I had all the ingredients to whip up this fab dip.
Chorizo Queso Dip
Made of Velveeta cheese, Ro-tel tomatoes, cream cheese and chorizo sausage, this dip is irresistible. Try Chorizo Queso Dip at your next party or mix it up for a family snack. Chorizo Queso Dip
1/2 lb. fresh chorizo
1 – 16 oz.pkg. Queso Blanco Velveeta cheese, cut into 1/2 inch cubes
1 can (10 oz.) Ro-Tel Original Diced Tomatoes & Green Chiles, undrained
8 oz. pkg. cream cheese, softened
1 cup milk and more if needed

Tortilla chips
in a large skillet over medium-high heat, add chorizo to skillet. Cook until browned and crumbly, stirring occasionally to break up lumps of meat. Drain chorizo on paper towel and return meat to skillet.
Add Velveeta, tomatoes, and cream cheese to skillet. Stir until cheeses are melted, about 7 minutes. Stir in milk to the consistency of your liking.
To serve, pour into serving dish; top with sliced green onions and serve with chips for dipping.
Dip can also be kept warm in a small crock pot on low temperature.
