My husband loves salsa and I love making it. Fresh tomatoes are in abundance right now and salsa is a good choice for health-conscious snackers. Vegetables are mostly used when making salsa as in this recipe for Chunky Fresh Tomato Tomatillo Salsa. The classic combination of vine-ripe fresh tomatoes, two types of peppers, tomatillos, onion, cilantro, and the citrus taste of lime juice is fantastic with tacos, nachos (see below) or eaten with tortilla chips. If you can find Marconi peppers, use them otherwise any sweet red pepper will work in this recipe. Marconi peppers are very similar to baby (mini) sweet peppers but larger. Another ingredient I keep on hand is Penzeys Cilantro. It easily takes the place of fresh cilantro when you’ve forgotten to get it at the grocery store as I did. I guarantee you won’t leave empty-handed. The store is amazing and has great gift ideas, too. I get in big trouble when I go there. Lastly, Chunky Fresh Tomato Tomatillo Salsa is high in vitamin C, low in carbs, and virtually no fat in a 1/2 cup serving. I make this salsa quite often and I’m sure you will, too. Chunky Fresh Tomato Tomatillo Salsa
Chunky Fresh Tomato Tomatillo Salsa
6 plum tomatoes, diced
2 Marconi red sweet peppers, seeded and diced
2 Jalapeno peppers, seeded and diced
3 tomatillos, diced
1 small red onion, diced
2 T. Penzeys Cilantro (dried) or 2 T. fresh cilantro, chopped
2 t. Penzeys Shallot salt
1 – 2 t. Penzeys Shallot pepper
1 t. sugar
Juice of 1 lime
In a large mixing bowl, add all ingredients. Combine thoroughly; pour into serving bowl, cover and refrigerate for at least 1 hour before serving. Serve with tortilla chips, tacos, burritos, over grilled fish or top your favorite homemade nachos.
