Now, how do you make sour orange juice? Accomplish this by mixing equal parts of fresh orange juice, lime juice and lemon juice. That’s all there is to it. If you can find sour oranges in a market, use them, otherwise follow my method of creating the juice for this recipe. It’s one great marinade for skirt steak or even flank steak.

Using fresh oregano leaves takes this steak to the next level. Oregano has a strong herby, peppery, minty taste yet works marvelously with citrus or as part of an infusion like a marinade. Combined with garlic, this marinade becomes a showstopper.

So, what is a mojo? It’s an abbreviated name of several sauces. Used mainly with meats, poultry and seafood but also adds great flavor for vegetables especially when grilling. Latin and Cuban inspired is a fabulous way to infuse quick flavor. Give this marinade a try on your favorite foods and get your mojo on.

Citrus Mojo Marinated Skirt Steak

2 pounds skirt steak, trimmed

1/3 cup fresh orange juice

1/3 cup fresh lime juice

1/3 cup fresh lemon juice

1/3 cup Olive oil

1/4 cup chopped fresh oregano leaves

7 garlic cloves, finely minced

Salt and pepper to taste

 

Place steak in a large Ziploc bag. Whisk together the rest of the ingredients for marinade except salt and pepper and pour over meat.

Marinate for 2 hours to overnight. Bring steak to room temperature for 20 minutes before cooking. Season steak with salt and pepper.

Grill 3 to 4 minutes per side over high heat. Thicker steak will need a minute more as medium-rare to medium is perfect.

Slice steak thin against the grain and serve with lime wedges.
