Spring means baking cakes and my Cookbook of the Month – April 2022 recommendation. This month I’ve chosen the theme of baking Spring cakes with Easter in mind. I suppose I feel that way because of pastel colors used in frostings and decorations. Cake Love: How to Bake Cakes from Scratch by Warren Brown is a standby and go-to when I want to amp my cakes up a little. The cake recipes are flavorful and fun and perfect for any time of year.

First published in 2008 , this cookbook is a favorite because Warren is creative yet simple, tasty and fun with recipes for any home baker. The recipes are easy to follow and made with ingredients readily available at your local market.
Warren has written about how to conquer your fear of baking cakes and have friends and family eyes pop out as they lay their sights on your spectacular creations. Did I mention how you feel when someone takes that first bite? You feel elated and proud and you should be.
The love of baking shines through every creation. My Grandmother said to share what you love and I do every time I bake. Baking cakes is not always a cake walk yet when done correctly with patience and reading a recipe before starting you’ll become more confident about your skills. Just keep baking.

This cookbook contains step-by-step photos that when I first laid eyes on this book, I wanted to run to the kitchen. You will want to indulge yourself rather quickly after flipping through these beautiful pages.
How to Bake Cakes from Scratch is filled with pound cakes, sponge cakes, cupcakes including frostings, glazes, fillings and meringues. Learn about basic ingredients, equipment to use and invaluable techniques. You’ll enjoy the pages containing 10 things to become a better baker.

So let’s take a peak inside this glorious book at a few of my favorites. Pound cakes are first with “LCD” Vanilla Pound Cake (page 32-35), moving on to Butter Cakes like White Butter Cake (102-103) and it’s fabulous. Next, we have Sponge Cakes like classic Yellow Sponge Cake (Genoise) – (page 126-127). Serve sponge with fresh fruit like raspberries, strawberries, or blueberries.
The last sections are frostings and glazes, fillings, meringues, how-to assemble cakes, how-to toast nuts and make syrups. See what I mean as it seems like this cookbook has something for every baker at any level.

As I thought about what one of my favorite cookbooks I wanted to recommend, Spring means cakes to me. My Mom always baked cakes during Thanksgiving and Christmas and again during the Spring around Easter. Not quite sure why yet it doesn’t really matter. A good cake is good anytime.
I have baked nearly every recipe in this cookbook because I wanted to and every one has turned out marvelous. I use this book to bake for special occasions like birthdays. I’m sure you have family members who love their favorite cake on thier special day and why not?
