Seems like I’m staying with a vegetarian theme with my Cookbook of the Month – February 2022. I’m going back a few years to an oldie but goodie in The Greens Cookbook by Deborah Madison. Published in 1987, it’s the recipes of the restaurant of the same name located on the San Francisco Bay. Greens was one of the first restaurants to solely serve vegetarian cuisine and has changed the way we cook without meat. I love this cookbook and I think you will, too.

Deborah provides professional tips before each recipe for know-how and inspiration. Recipe sections include salads, soups and stocks, sandwiches and breads, pizzas, pasta, gratins, stews and casseroles, tarts and timbales, filo pastries, frittatas, crepes and roulades, companion dishes, sauces, relishes and butters, and desserts. That was mouth full! No matter your taste, there’s something for everyone.

Over the years, I definitely have some tried and true favorites like the Romaine and Summer Vegetable Salad and Lime Vinaigrette (page 8). Easily create this recipe with Winter vegetables. the vinaigrette is delicious. Try the Wilted Spinach Salad (page 11), Moroccan Carrot Salad (page 27), and since blood oranges are in season, give the Fennel and Blood Orange Salad (page 37) a try. Not just for Summer, try the Spinach, Cheese and Tomato Lasagne (page 168). If you’re a cheese lover like me, try Baked Polenta Layered with Tomato, Fontina and Gorgonzola (page 197). This dish is great for entertaining family and friends. The list goes on and on.
However, you choose to use this cookbook, you will not be disappointed. Carnivores and vegetarians rejoice because you’ll find a recipe to eat meatless any day of the week. Purchase a used copy from Amazon or wherever you buy your books. Leave a comment if you purchase and cook any of the recipes.
