Cookbook of the Month – January 2022

Happy New Year 2022 everyone! As we start a brand new year, we all hope this year brings good health, continuing to be thankful for blessings from 2021 and new ones continued in 2022. Speaking of good health, do you make resolutions to eat better, reducing processed foods and sugar in your diet? You are not alone. I give you incentive in my Cookbook of the Month – January 2002, Food52 – Vegan. Several years ago, I purchased this cookbook because I follow the Food52 community and love all their cookbooks. The recipes are creative, easy to follow, taste good and have something for everyone.

Easy to follow vegan recipes

What is Food52 – Vegan all about? This cookbook is deemed to help with those resolutions you’ve made surrounding eating less meat, saturated fat, sugar, and processed foods. Some recipes contain sugar and white flour, however in reduced amounts. Tempeh is used as a meat substitute in a few recipes but his book is completely vegan. I’m not a fan of tempeh so I leave it out. If this is the first time or seldom eat vegan then I recommend giving this cookbook a looksy.

Gena Hamshaw, the author of this cookbook writes a vegan column on Food52. She writes for those who completely vegan and everywhere in between. As a whole, we have been doing more cooking for and ourselves and family because of Covid. That said, you’ve probably made dishes you may not have ever considered before. Incorporating a plant-based diet into everyday eating comes into focus. The goal in cooking is to serve recipes that are delicious, tried & true, and deeply satisfying. You’ll look at plant-based eating in a whole new way.

Plant-based doesn’t have to be boring or lacking flavor

Plant-based eating is big change and does take some getting use to especially if you’re a meat eater like myself. This cookbook is not new but was written when plant-based eating became a thing. Now, there are websites galore cooking plant-based meals and how to use ingredients such as cashews, coconut oil, dates, and nut milks. Nut milk (page 134) even Horchata (page 135) recipes are  provided. It’s truly amazing to see what’s available.

Deliciousness awaits!

Try to incorporate a vegan meal into your diet a couple times a week to get started. You’ll begin to stock up on more fresh vegetables, coconut oil, and searching for more vegan recipes. Many of you have learned to cook more at home and find new recipes to serve your family. I bet you’ve found cooking relaxing and a happy place as I do. Nothing like tasting your own cooking.

Some of my favorite recipes from Food52 – Vegan are Coconut Quinoa Porridge with Toasted Almonds (page 4), Date Nut Bread (page 11), Jamaican Jerk Chili with Quinoa and Kidney Beans (page 57), Quinoa Salad with Sweet Potatoes, Kale, and Pesto Vinaigrette (page 75), Chocolate Cake with Chocolate Filling and Ganache (page129), and Mushroom, Pecan, and Lentil Burgers (page 90). I highly recommend this cookbook on starting plant-based eating. The recipes are familiar enough to not shock you but leave you wanting more. Happy Cooking!
