Calling All Foodies! Summer is still in full swing. How many of you love grilling? Do certain foods come to mind and that feeling like you can taste it by just thinking about whatever it is? Whether novice or professional I bet there is something you love above all else on the grill, bold and flavorful, savory or sweet. My Cookbook of the Month – July 2019 is a longtime favorite, “Boy Meets Grill” by Bobby Flay. I know this is an older grilling cookbook like 20 years old yet some food just can’t be forgotten.  As the Chef and Owner of Mesa Grill, Bolo and Bobby’s Burger Palace, if bold and full of flavor is what you like, that’s what you’ll get. Bold is Bobby’s middle name.

Enjoy This Tried and True Grilling Cookbook

Either you grill all the time, rain or shine, and entertaining friends and family or just for yourself. If you’re not a fan of grilling I’m sorry. That’s all I can say. For those who love grilled foods, check out this book because  this cookbook contains more than 125 recipes to please even the pickiest palate. Great ingredients make for great food like using interesting spices and flavorings. Bobby suggests buying ingredients year around.

Great Recipes For Outdoor Entertaining Fun

Bobby suggests buying ingredients year around so when optimal grilling season is in full swing you’re all ready to fire up the grill. In addition to various salts and peppers, keep varieties of vinegars on hand like balsamic, red wine, rice wine, apple cider and sherry. Next on your list should be a good Olive oil and a must have. Dried chile powders such as chile de arbol, ancho, pasilla, and cascabel come in really hand to punch up flavor of rubs and marinades. Other pantry staples to have on hand are an assortment of mustards, cumin, curry powder, paprika, and cilantro. I can easily add to Bobby’s list yet I must stop somewhere.

Bold, Flavorful Recipes

The one thing I was told years ago when learning to grill and barbecue is to not let the grill intimidate you. We all have to learn what temperature is best and learning what flavors you like is through trial and error. Remember grilling is cooking food quickly at a high temperature. You want a sear and flavorful crust yet a juicy interior. Barbecuing is low and slow especially when cooking tougher cuts of meat. That’s where having a smoker comes in handy.

Also provided in this cookbook is how to choose a grill, grilling equipment to own, and grilling Bobby’s way. Bobby will definitely have you thinking differently about how to grill. Learn ways to enhance the flavor of your foods and what not to bother cooking on the grill. Even better, learn how to organize and prioritize your grilling area. What I have learned over the years watching my Mom and my uncle is grill what you love. Keep everything simple yet festive.

So, speaking of festive, many of these recipes will feed at least 6 to 8 people. Perfect for Summer entertaining I think. Need an appetizer, try Grilled Flatbread with Ricotta Cheese, Fresh Tomatoes, Basil, and Roasted Garlic Oil (page 36), an entree, Bobby’s Dry-Rubbed Rib-Eye Steaks with Mesa Barbecue Sauce (page 141), and dessert like White Chocolate-Banana Cream-Coconut Pie (page 242).
