Cookbook of the Month – March 2020

So what do you have planned for the weekend? Me? I’m reading through my library of cookbooks looking at old favorites and thinking of new creations. Like most of you fellow foodies, I cook when I need to keep busy. Here in Chicago, our Mayor and Governor have asked for all of us to stay in and only venture out to grocery shop. Since I’m nursing my knee back to health and doing my home exercise program, cooking is my happy place. That said, view online my Cookbook of the Month – March 2020 “Sizzling Skillets and Other One-Pot Wonders” by Emeril Lagasse. Wonderfully delicious easy one-pot meals for these trying times are in order.

Make Enough To Freeze For Later

I know you’re asking what’s good about this cookbook. Well, every recipe in this cookbook is made in one-pot. Oh, you may need a skillet or two but minimal dirty dishes and mess. Most recipes allow you to prep ahead of time like one of my favorites, Braciole (page 176). I make my steak rolls the day before by making filling and rolling. Then I cook the whole dish the next day because the meat simmers for 2 to 2 1/2 hours. It’s sooooo good. Serve with your favorite pasta.
