Seems like I’m always baking for my coworkers especially as the holidays grow near. My Cranberry Chocolate Chip Cookies were a hit and everybody who got some are still talking about them. As a result, recipes I create allow a large group of people to be my taste testers. I do have an in-house taste tester in my husband but unbiased opinions are best sometimes. However, I have never missed the mark on sweet treats I’m sharing with friends and family.

What makes these cookies so special? Dried cranberries and chocolate chips lead the way. Also, what else makes these cookies so tasty and unforgettable is additional salt is added. Something magical happens when salt and sweet come together especially where chocolate is concerned. The darker the chocolate the better while cranberries infuse a sweet and tart and chewy bite in each cookie. Need I say more?

The next best thing is the crispy golden brown edges and ooey gooey chewy middles. My favorite type of cookie, buttery, crunchy and chewy. I promise you will not be able to eat just one.

All the pictures were shot at work and after baking 18 dozen cookies I forgot I hadn’t set up for better shots. In addition, once word is out I’ve baked it’s like bees to honey in the break room. Gotta make sure I have big containers to hold all these cookies and allow for easy cleanup.

Cranberry Chocolate Chip Cookies
Cranberry Chocolate Chip Cookies
2 1/4 cups unbleached all-purpose flour
1 t. baking soda
1 1/2 t. kosher salt
2 sticks (1 cup) unsalted butter, softened
3/4 cup packed light brown sugar
3/4 cup granulated sugar
1 t. pure vanilla extract
2 large eggs
2 cups semi-sweet or dark chocolate chips
1 cup dried cranberries, rough chopped
In a medium bowl, combine flour, soda, and salt; set aside.
Using a large mixer bowl, beat together butter, granulated sugar, brown sugar, and vanilla until creamy, about 3 minutes.
Add eggs, one at a time, mixing well after each addition.
Gradually mix in flour until just combined. Stir in chocolate chips and cranberries.
Cover and chill cookie dough for at least 2 hours to overnight.
To bake cookies, heat oven to 375 degrees. Scoop by rounded tablespoon on parchment-lined baking sheets, 2-inches apart. Bake for 9 to 10 minutes or until golden brown.
Allow cookies to rest a couple of minutes on baking sheets. Remove to wire racks to cool completely. Store cooled cookies in air tight containers or freeze up to 3 months.
Makes about 5 dozen cookies.
