Creamy Caesar Salad Dressing made with anchovy paste, lemon juice, garlic, Parmesan cheese, Worcestershire sauce, and Olive oil mayonnaise is different. Most often Caesar dressings are not creamy and made with anchovy fillets. I have always used anchovy paste. My friend, Suzanne makes the best Caesar Salad in the world. When I travel back to Ohio for a visit, believe me dinner at her house is not complete without her infamous salad.
One day I was playing with ingredients and came up with Creamy Caesar Salad Dressing. First, Olive oil mayonnaise has a pleasing taste on the palate. Creamy Caesar Salad Dressing
2 garlic cloves, finely minced
1 1/2 t. anchovy paste
1 t. Dijon mustard
2 T. fresh lemon juice
1 cup mayonnaise (olive oil blend)
1 t. Worcestershire sauce
1 T. water
¼ t. salt
¼ t. black pepper
1 T. Parmesan cheese
Caesar Salad:
Romaine hearts
Salad croutons
Additional Parmesan cheese
Combine all dressing ingredients in a medium-sized bowl. Chill at least one hour before using.
