Hey Y’all! How’s your weekend going? I hope this post finds everyone healthy and well. Just got off the phone talking with my sister about what else, food, of course.She was trying out a new recipe and I was giving her a few tips. It was a chicken recipe and it turned out good she said. I told her I had made a perfect side dish this week that would go marvelously with the chicken. My Creamy Cilantro Jicama Coleslaw would go great with her meal. This recipe is creamy, slightly sweet and savory all at the same time. You can never have enough cool and refreshing salads for summer meals.

few recipes can go untouched by me with my own spin. This salad is delicious as is served at room temperature. However, my husband felt like something was missing once refrigerated. So I made this coleslaw again and changed a few things. My husband felt the slaw needed a bit of sweetness especially once refrigerated. I thought what the heck, I’ll add a new spin. For those of us who are diabetic and need to watch our sugar intake, I use agave syrup sweetener. Low on the glycemic index, it’s the perfect replacement for granulated sugar. It’s wonderful for dressings and sauces. Give it a try and be surprised. Like all sugars, limit your intake as much as possible

Crunchy Is A Perfect Texture On The Palate

Preparing this coleslaw is super easy and a quick last minute recipe. Start by shredding jicama which I’m telling you now is a pain to peel. Combine jicama with bagged coleslaw mix. Set aside and mix dressing in a small bowl. Adjust seasonings as desired and pour dressing over slaw. Mix until thoroughly combined. Let sit in refrigerator for 1 hour before serving. The slaw can be made ahead of time but give it a good stir from refrigerator before serving. And there you have it, a great Summer side.

Super Easy and Delicious!

My suggestion is to serve this coleslaw with grilled skirt steak, chicken or fish. I find anything with cilantro works and tastes unbelievable. Such a wonderful combination in my book. Never tried jicama? It’s a tasty vegetable with notes between an apple and a pear. Jicama makes great french fries like sweet potato fries. It’s been a long time since I used jicama so I think I better create more recipes for you all. That said, give this slaw a try of which I’m sure you will enjoy. Creamy Cilantro Jicama Coleslaw

3 cups coleslaw mix

2 cups peeled and shredded jicama

3/4 cup mayonnaise

2 T. fresh lime juice

1 T. agave syrup (optional)

2 T. chopped fresh cilantro

1/2 t. ground cumin

Kosher salt and freshly ground black pepper to taste

 

In a small bowl, combine mayonnaise, lime juice, cilantro, and cumin. Add in salt and pepper to taste. Set aside.

Place coleslaw mix and jicama in a large serving bowl.

Pour in dressing and mix all ingredients until well combined. Cover and refrigerate for 1 hour before serving.

 

Makes 6 servings.
