Mayonnaise is stirred in with an ample addition of one of my favorite spice blends, Penzeys Now Curry. Creamy, crunchy, and the magical taste of curry. What more could you ask for?
Crunchy Curry Chicken Salad
As with most everything I cook, my recipes are always based on something prepared by my Mom, family member or friends. Do you sometimes get inspiration when shopping at the grocery store? No better place for it in my opinion. Anyway, Mom made chicken salad quite often in the summertime. Dad was not a fan but I was for sure. So Mom and I would make sandwiches or eat with crackers especially on those days when canning and freezing was at peak. The weekend is perfect for having this tasty salad on hand to grab and go.
Crunchy Curry Chicken Salad
Most areas of the country are or have been experiencing really hot weather. Who wants to grill when it’s that hot? You’re sweating while you’re cooking so where’s the fun in that. No, thank you as I love to grill as much as I can but heat is heat. You can grill the chicken if you like but I poach mine in chicken broth and let cool in the broth. In case you weren’t aware, cooling your chicken in the broth keeps it moist until ready to use. Once cool, dice for the salad. Add in all the rest of the vegetables and seasonings. Chill before serving on crackers for a quick appetizer or on your favorite bread for tasty sandwiches at lunch. If you’re thinking a light dinner, serve chilled salad on green leaf or bibb lettuce as a wrap.

Need something to grab and go, add this Crunchy Curry Chicken Salad loaded with fresh crunchy veggies and flavorful chicken. No doubt you’ll love it as much as I do. All ingredients can be varied to your taste but the curry is the star. Add as much or as little as you like and don’t forget to checkout Penzeys variety of curry powders. Crunchy Curry Chicken Salad
Crunchy Curry Chicken Salad
1 ½ pounds boneless, skinless chicken thighs, cooked and chopped
3/4 to 1 cup mayonnaise
1 t. granulated sugar, optional
2 t. Penzeys Now Curry powder (use 1 t. at a time)
Seas salt to taste
1/2 red bell pepper, diced
1 rib of celery
1/4 cup diced red onion
2 green onions, green and white parts, chopped
4 boiled eggs, chopped
1/2 cup slivered almonds
In a large mixing bowl, combine chicken, mayonnaise, sugar, and curry powder. Sprinkle and stir in 1 t. curry powder and salt. Taste and add more curry if you like.
Stir in bell pepper, celery, red and green onion, eggs and almonds.
Allow chicken salad to chill for at least an hour before serving on crackers for an appetizer or snack. Spread on your favorite bread for sandwiches or on green leaf or Bibb lettuce for wraps.
