“Ditalini Pasta Salad with Tomberry Tomatoes”

Pasta is certainly one of the most versatile foods on earth. Whether you cover in red or white sauce, toss with Olive oil and butter, add to soups or enjoyed in salads, it never gets old. It was a hot day when I made my Ditalini Pasta Salad with Tomberry Tomatoes. I wanted something different using pasta, of course yet with ingredients I had in my refrigerator. No need to buy more when I had veggies I needed to use like mini cucumbers and some fresh herbs. This salad is both sweet and savory.

However, on my last trip to my market, I purchased these tiny little gems called Tomberry Tomatoes. Never saw them before and a lady standing in the aisle with me said buy them because they are delicious. Took her word for it and purchased the little tomatoes. Boy am I glad I listened to her because they are an explosion in your mouth. These little darlings are sweet and fun to eat. I thought they will be a great addition to my pasta salad. I served this pasta salad with grilled chicken.

Tomberry Tomatoes are relatively new on the food scene dating back to 2017 from Canada. That said, be sure to shop for these tiny tomatoes at your local market for this salad. Purchase ditalini and cook according to package directions and rinse in cool water. This keeps pasta from sticking together to stop cooking. Drain well before adding in other ingredients including cucumbers, tomatoes, and green onions. In a small bowl, whisk together oil, vinegar,and honey. Pour over pasta and mix. Adjust seasonings including salt and pepper to taste. Stir in fresh herbs and refrigerate until ready to serve. I like to bring pasta salads to room temperature before serving.

Ditalini Pasta Salad with Tomberry Tomatoes

1 1/2 cups uncooked ditalini pasta (3 cups cooked)

2 mini cucumbers, halved lengthwise, thin sliced

2 to 3 green onions, sliced

2 – 4.5 oz. packages Tomberry tomatoes

3 T. chopped fresh dill

3 T. chopped fresh parsley

1/4 to 1/3 cup Olive oil

1/3 cup white balsamic vinegar

1 T. honey (I used orange blossom)

Kosher salt and black pepper to taste

 

Cook pasta according to package directions, rinse with cold water and drain. Place in a large serving bowl.

Add in cucumbers, green onions, tomatoes, dill, and parsley.

In a measuring cup, whisk together Olive oil, vinegar, and honey.

Pour dressing over pasta ingredients and stir to combine, adding in salt and pepper to taste. More vinegar and oil can be added if you desire to taste.

Refrigerate for one hour before serving for flavors to come together. Bring to room temperature before serving.

 

Makes 4 to 6 servings.
