Baking brings back so many childhood memories. One recipe in particular comes to mind…Dollie’s Gooey Bars. This recipe was one Mom would make for my sister and I some 40 years ago. Yes, I said 40 years ago. How time flies…Mom adapted this recipe from her good friend, Dollie. Dollie’s Gooey Bars are decadently sweet and sinfully delicious. Made with six ingredients like yellow cake mix, butter, cream cheese and eggs with powdered sugar sprinkled on top right out of the oven.
Several weeks ago, I needed to bring something for a potluck at work. Baking as often as I do for coworkers, I was looking for something new no one had tasted before. Believe me everyone has their favorites and I love it. Looking through an old recipe box, lo and behold, Dollie’s Gooey Bars popped out at me. I had not made Dollie’s Gooey Bars recipe since my Mom passed away eight years ago. Well, it was time to bring out this recipe and my sister agreed. So, from my Mom to you, enjoy these sweet gems and share with family and friends. Sure to be a hit!
Dollie’s Gooey Bars
1 box yellow cake mix
1 stick butter, melted
1 egg
8 oz. pkg. cream cheese, softened
1 – 1lb. box confectioners’ sugar, plus more for sprinkling
2 eggs
Preheat oven to 325 degrees. In a medium bowl, mix together yellow cake mix, melted butter, and 1 egg; press into a 13×9 pan. Set aside.
In same bowl used to mix first three ingredients, mix together cream cheese, confectioners’ sugar, and 2 eggs until well combined. Pour over cake mixture.
Bake for 40 minutes until edges are browned and pull away from the sides of pan.
Remove from oven; sprinkle bars with confectioners’ sugar while hot. Cool completely; cut into squares and serve.
Note: Use chocolate cake mix instead of yellow cake mix for variation.
