Breakfast is essential in getting your day started in a healthy way. So, it’s amazing how something so simple can be so darn good. You want good food in an hour or less so I have a breakfast remedy. A recipe I believe will become a family favorite as it has in mine, Easy Corned Beef Hash. Deliciously simple and easy I might add. I know I can’t say that enough.
When you think Easy Corned Beef Hash, it’s probably the canned stuff that comes to mind. Since it seems like we are always in a hurry and running short on time, canned hash is where you go at times. Canned hash is usually too salty and mushy in texture. Not a great combination is it? Pretty yucky I’d say. Make your own corned beef or do what I did and buy corned beef from the deli (Vienna Beef ) to make Easy Corned Beef Hash. Since making hash is about both flavor and texture, thick sliced works best. So stay away from canned corned beef hash when you can make an exceptional hash at home. The flavors do not compare especially when served with two eggs over easy close by. Now that’s a match made in heaven.
Easy Corned Beef Hash
Easy Corned Beef Hash
2 T. Canola oil
1 – 20 oz. package Simply Potatoes Shredded Hash Browns
1/2 large white onion, chopped
1/2 pound corned beef, coarsely chopped
Salt and pepper to taste
Heat Canola oil in a large skillet over medium heat. Add hash browns, sprinkling onions on top. Cook hash browns according to package directions, about 20 – 25 minutes.
Once potatoes are crispy and browned, add in corned beef and stir. Do not cover, cooking corned beef and hash browns until brown and crisp. This takes about 10-15 minutes. Stir hash occasionally as needed. Any additional cooking time is up to you. Add salt and pepper to taste.
Serve corned beef hash with poached or eggs over easy.
