Hey there! Labor Day weekend is around the corner and I have a salad that can be made ahead of time. As a matter of fact, if this salad is allowed to sit overnight in the refrigerator the better. It’s the last Summer holiday and when we were kids my Mom pulled out all the stops. This Easy Creamy Broccoli Cole Slaw is crunchy, tangy, slightly sweet and seasoned just right. I love this simple, semi-homemade side as it goes with any grilled food. Recipe can be doubled easily for a large crowd if necessary because you never want to run out of food.

So how do you celebrate the ending of Summer? Small family gathering or large gathering? Lots of food so everyone can dig in or lots of small bites so everyone can nibble all day? I happen to enjoy a little of both where everyone can mingle and catch up on life. For many of us, this is the time of year when big gatherings will be limited going forward. So, my suggestion for each of you is to make foods you love and savor each and every moment and morsel.
Easy Creamy Broccoli Cole Slaw
Okay, now let’s make this cool, crunchy slaw. Any brand of broccoli slaw mix will work for this recipe. I just happen to prefer McCann’s because I like the way it’s cut. This mix is not chopped but thinly julienned. The dressing which coats this slaw is creamy made with mayonnaise and sour cream. Lite mayonnaise and sour cream can be used if you’d like to cut a few calories. Coconut sugar is another ingredient that can be used instead of granulated sugar if desired. I love using apple cider vinegar yet white wine vinegar can be just as tasty. Celery salt is for an earthy freshness to the slaw. You can use celery seed also if you like. Mix and refrigerate until ready to serve.

My Mom loved making some type of cold salad when we cooked barbecue or grilled foods. There is something about the combination on a Summer day that just goes together. A little of sweet, savory, tangy, creamy, crunchy and even a bit of heat just works, don’t you agree? Julienne broccoli, red cabbage, and carrots are a healthy delicious combination then add a flavorful dressing for a perfect side. Believe me, no one will be able to resist after one bite. Grab a bag of broccoli slaw on your next grocery store trip and enjoy this simple side as much as I do.
Easy Creamy Broccoli Cole Slaw
1 package (12 oz.) Mann’s Broccoli Cole Slaw
3/4 cup Duke’s mayonnaise
1/4 cup sour cream
1 1/2 T. apple cider or white wine vinegar
2 to 3 T. granulated sugar
1/4 t. celery salt or to taste
1/4 t. ground black pepper
Pour cole slaw into a large serving bowl.
In another bowl, combine mayonnaise, sour cream, vinegar, sugar, celery salt, and pepper.
Stir dressing into slaw mix and refrigerate for at least 2 hours before serving.
Makes 4 servings.
Note: Add in poppy seeds, pepitas, sliced almonds or pecans, dried cranberries or fruits for additional fresh flavors.
