Grab your favorite bread and give this deliciously, easy Extra Creamy Egg Salad a try. Do you remember your Mom’s egg salad with a little mayonnaise, celery, pickle relish and nothing else in it. Well, this recipe goes one step further to make it extra creamy with two ingredients I would have never thought of using. Bet you’re dying to know what those ingredients are?
Extra Creamy Egg Salad
My sister found this recipe and gave it to me to make. Not sure where she found it but it’s now my new favorite egg salad. So perfect because the husband loves egg salad and I aim to please.
Okay, listen up because the first mystery ingredient is cream cheese. It provides a slight tang but superb creaminess and flavor. The second mystery ingredient is butter. Yes, I said butter. But I said the same thing so do not leave it out. Butter is a must have in this recipe.
Extra Creamy Egg Salad
Be sure your cream cheese and butter are soft before you mix all ingredients. You can be very creative with egg salad, adding in some of your favorite ingredients. I sometimes use bacon in my salad yet other times I will leave it more plain.
Do whatever you like, add in whatever you like. Satisfy your own taste buds because I want them to be happy. Make your egg salad at the beginning of the week for quick lunches during the week or an on the go dinner. Grab a few croissants because this salad is made to be served on a buttery bread. Extra Creamy Egg Salad
6 large hard boiled eggs, finely chopped
3 oz. cream cheese, softened
2 T. unsalted butter, softened
1 to 2 T. mayonnaise (Duke’s or Hellman’s)
2 T. minced celery
2 t. finely minced white onion
1 t. granulated sugar
1/2 t. fresh lemon juice
1/4 t. fine sea salt
1/8 t. black pepper
3 T. minced bacon, optional
Dill or Sweet pickle relish, optional
In a medium mixing bowl, cream together cream cheese and butter until smooth.
Stir in mayonnaise, celery, onion, sugar, lemon juice, salt and pepper.
Add in eggs and mix well. Stir in bacon and relish if using.
Cover and refrigerate for at least one hour to overnight.
Adjust seasonings if needed.
Serve on croissants or bread.
