Sometimes you find ingredients in the craziest places. One day while shopping in our local mall I saw a store that just seemed to be calling my name. The store was called Pepper Palace. I thought Pepper Place and what is that? It was a weekday afternoon which is not the time I’m normally at the mall. However, the store was relatively busy for it not to be a weekend. Pepper Palace is filled with every hot sauce including the hottest made from Carolina peppers. Barbecue sauce, glazes, rubs, seasonings, salsas and everything in between fill their shelves. Most of all, you can taste most everything they sell. This place is a cooks dream especially if you’re the adventurous type like me. I went home and created a recipe from a glaze I found that day, Flat Iron Steak Kabobs with Spicy Sweet Bourbon Glaze.
I’d say these babies are a meat treat on a stick. Pepper Palace’s Spicy Sweet Bourbon Glaze is highly recommended for all meats, poultry and seafood. The glaze is a sweet heat produced from cayenne pepper used which pops up at the end and not a constant heat. Even if you’re not a fan of spicy, I think you’ll fall in love with this glaze. They also make a non-spicy flavor for those faint of heart but don’t be afraid as I wouldn’t steer you wrong. My kitchen is never without during grilling season for quick weeknight meal prep. You taste bourbon, molasses and soy sauce which are prominent robust flavors.

So, let me tell you how and why I use this cut of beef and this fabulous glaze for my Flat Iron Steak Kabobs with Spicy Sweet Bourbon Glaze. I use flat iron steak for beef kabobs because it is tender, flavorful and well marbled. Flat iron steak can be grilled on its own as you would any other steak. A butcher at a market I shop at regularly told me to try making kabobs using flat iron steak. Definitely one of the best suggestions I have ever received and I continue to create showstopping skewers using this beef.
My reasons for using this glaze for these kabobs is simple. Let’s just say it is just plain knock your socks off good. 2 pounds flat iron steak, cut into 24 cubes
1 – 12 oz. bottle Pepper Palace Spicy Sweet Bourbon Glaze
Bamboo or metal skewers
Place beef cubes in Ziploc plastic bag. Pour half of bottle of bourbon glaze in bag over beef. Close bag and massage to cover beef completely. Put bag in refrigerator to marinate at least 4 hours to overnight.
Thread beef cubes onto skewers to your liking and set aside. Discard bag and marinade.
Heat and clean grill according to manufacturer’s instructions and reduce heat to 400 degrees.
Grill kabobs 2 minutes per side, about 8 – 10 minutes or until desired doneness. Do not overcook as smaller beef cubes will not take as long.
Note: Use remaining glaze to baste beef while cooking or refrigerate rest for another use. Tastes great on pork, chicken and seafood.
