Today I’m bringing you a recipe most of us think of only at Thanksgiving. Why is that? Is it because when we think of the whole thing and what to do with leftovers? Thinking this is going to take way too long and I don’t have time? Well nonsense as my Fox Point Oven Roasted Turkey Breast will have you rethinking options on preparing fresh turkey breast.
This recipe can be done any weeknight or weekend in preparation for the coming week. Mark my words because Fox Point Seasoning (known in Milwaukee location and Lake Shore Drive Seasoning in Chicago) is one of my favorite seasonings from The Spice House and fresh turkey breast is amazing. I’m sorry but deli turkey does not do it for me. Plus my husband loves turkey and I needed to come up with recipes for good and tender oven roasted turkey breast. Follow my recipe and you’ll become a believer.
Fox Point Oven Roasted Turkey Breast
Let me tell you how easy this turkey breast is to make. First buy, the freshest breast you can find whole or half, bone-in. Ask the meat manager if you don’t see fresh turkey readily available. I’m fortunate enough to have a market which sells fresh turkey year round. Trim of all visible fat but leave skin on for the purpose of keeping meat from becoming dry while roasting. Soften butter and mix in fox point seasoning. Lift skin and smear half the butter mixture under skin then rub the rest on the outside. You can do this ahead of time or roast right away. I like mine to sit in refrigerator overnight.
When ready to roast, sprinkle with black pepper, cover baking dish with foil and roast 30 minutes. Uncover and continue to roast 30 to 40 minutes and inserted instant read thermometer registers 160 degrees. Baste turkey with melted butter while roasting and once removed from oven. Cover and let stand 5 to 10 minutes before slicing. Remove skin if desired, slice and make the most fabulous turkey sandwiches ever.

So don’t wait until Thanksgiving to have fresh turkey. Get to your market and stock up. A 2-pound bone-in breast will make about four sandwiches nicely piled with tender turkey. My husband is in love with this recipe as he will ask when I’m roasting turkey again. I aim to please so your yourself and your family the next time you reach for deli-style turkey. Fox Point Oven Roasted Turkey Breast
Fox Point Oven Roasted Turkey Breast
One – 2 to 2.5-pound fresh bone-in turkey breast (half of breast)
1/4 cup salted butter, softened
2 t. Fox Point Seasoning (in Milwaukee) or Lake Shore Drive Seasoning (in Chicago)
Ground black pepper
Heat oven to 350 degrees. Trim any excess fat from turkey if needed. Loosen skin on breast as it becomes a pocket.
In a small bowl combine butter and fox point. Spread half of butter mixture under skin and spread remaining over outside of breast.
Place turkey in baking dish, skin-side up, cover with foil and bake at 350 degrees for 30 minutes.
Remove foil and continue roasting 30 to 40 minutes or until instant read thermometer inserted registers 160 degrees. Baste with butter while roasting and once removed from oven.
Cover again with foil and let sit for 5 to 10 minutes before slicing.

Note: Breast can be prepared in advance of roasting. Just refrigerate until ready. Let sit at room temperature for 20 minutes prior to roasting.
