In the last week we have been experiencing the warmest weather of the year. We’re talking darn right scorching with a whole lot of humidity. This says to me it’s still summer and summer foods are still in order. So, since I was grilling burgers and smoked sausages for dinner, consequently I made my Fresh Dill Potato Salad.
Nothing like using fresh herbs whenever possible and fresh dill happens to be one of my favorites. This salad has been a favorite at my wedding since it was one of the salads served.
Fresh Dill Potato Salad
Fresh dill has such a pronounced flavor profile either slightly sweet and sour and herby at the same time. I hope that makes sense. If you use both dried and fresh then you know what I mean. If you haven’t then start.
Dill is fabulous on fish and great in salads plus a little bit goes a long way. I still have some left from the bunch I bought in my kitchen right now. Every time I walk in my kitchen, I get a whiff of that wonderful smell. That’s why I know you’ll love my Fresh Dill Potato Salad.
Fresh Dill Potato Salad
My Fresh Dill Potato Salad is so easy to make and keeps well for several days if made ahead of time. Use russet potatoes because they stay firm and creamy yet tender and do not become grainy in salads.
Cool potatoes about 30 minutes after cooking before mixing with dressing. This allows the dressing to soak into the potatoes making the Fresh Dill Potato Salad even creamier once completely chilled.
The dressing is also super simple as its mixed right in your serving bowl. Whisk together sour cream, mayo, vinegar, sugar until well combined and then stir in the fresh dill and green onions.
Stir the potato salad until thoroughly mixed and season with salt and pepper to taste. Serve with your favorite grilled meats, sausages, or fish.

Summer is not over, and this salad will work as a go-to side in a hurry. Keep enjoying those summertime foods for as long as you can.

Fresh Dill Potato Salad
2 – 2 ¼ pounds Russet potatoes, peeled, cubed, boiled, and chilled
2 T. apple cider vinegar
1/2 cup sour cream
1/2 cup Olive oil mayonnaise
1 t. granulated sugar
1 small bunch green onions, green and white parts, thinly sliced (1/2 cup)
1/4 cup fresh dill, chopped
Kosher salt and pepper to taste
In a large serving bowl, mix together vinegar, sour cream, mayonnaise, and sugar until well blended. Stir in green onions and dill.
Add chilled potatoes to serving bowl with dressing, stirring to completely coat potatoes. Sprinkle in salt and pepper to taste. Place potato salad in refrigerator to chill for at least one hour before serving.
Great served with grilled burgers, sausages and seafood.
