That means our days are numbered when it comes to fresh fruit as we know during the hot summer months. Fruits like blackberries, raspberries, blueberries and so on will increase in price and the taste not as sweet. So, there is some good fruit still available which make these little snacks, Fruit Swords with Cream Cheese Dip perfect. First of all, kids will love the fact the fruit is skewered on bamboo sword picks. I found these at a local food service store. You can use small bamboo or plastic skewers if you can’t find the swords. Make the Fruit Swords with Cream Cheese Dip by alternating fresh fruit already on hand or purchasing what your kids love. I used blackberries, red grapes, strawberries and blueberries. I’ve made these for parties since adults like these as well.
The Cream Cheese Dip is softened Mascarpone cheese and Cool Whip. Mascarpone is not a sour as cream cheese but you can substitute in place of if you like. You may find you’ll need to add a little sugar. Very light and very creamy, fun and easy snack or light dinner ending. Fruit Swords with Cream Cheese Dip
Blackberries
Blueberries
Green or Red Grapes
Raspberries
Strawberries
Bamboo Sword Picks or small bamboo skewers
Cream Cheese Dip
1/4 cup Mascarpone cheese, softened
1/2 cup Cool Whip whipped topping
In a small bowl, mix Mascarpone cheese and Cool Whip until well combined. Refrigerate until ready to serve.
Thread fruit of your choice onto skewers. Arrange skewers on a plate and place whipped cream dip in the middle.
