Grab English muffins, fresh cherry tomatoes, mozzarella cheese, and fun mini pepperoni for a meal served with fresh fruit or as an after school snack. Fun English Muffin Pizzas can be made in 30 minutes or less. They’re perfect for kids to make themselves. If you’re short on time, use store-bought pizza sauce. But I love the taste of fresh tomato with a pinch of fresh herbs and salt. The mini pepperoni can be placed on top of cheese in any manner you or your kids wish. Fun English Muffin Pizzas
Fun English Muffin Pizzas
2 English muffins
12 cherry tomatoes
1/8 t. dried oregano
1/8 t. salt
Mozzarella cheese
Mini pepperoni slices
Split English muffins in half with a fork. Lightly toast in the toaster. Meanwhile, in a small bowl, chop cherry tomatoes; add oregano and salt. Mix together and divide between split muffins. Top each with mozzarella cheese and pepperoni slices. Place under oven broiler until cheese is bubbly and just begins to brown. Serve with fresh fruit.
Makes 4 pizzas.
Note: This recipe can easily be adjusted according to how many kids and or parents will be eating. Use store-bought pizza sauce if you like.
