Grilled Korean Style Pork Chops
Thank goodness for longer days so you can grill quick meals after work. In the Summer, I grill meat and vegetables for other days during the week and what a time saver it is. Preparing meals ahead of time allows other members of your family to feed themselves if everybody has crazy schedules. Just label your dishes or put in individual containers with instructions if need be.
Grilled Korean Style Pork Chops
In addition to being quick and easy, these chops are so tender and delicious and the glaze adds another layer of flavor with a bit of heat from sambal oelek. Sambal oelek is ground red chile paste used in small amounts because it’s very hot. Sambal will take any dish to the next level however, make sure to use in small amounts until desired taste is achieved. Everyone loves Sriracha so think of Sambal in the same manner. Hot sauces and spicy condiments are all the rage making these grilled chops a pleasure on the palate.

Chops are marinated for at least and hour or for more infused flavor, marinate overnight. The other trick to flavor is using the marinade yet be sure to boil the marinade for 5 minutes before basting the chops. Now you’re ready to grill them up. Grilled Korean Style Pork Chops
4 – 1-inch thick boneless pork loin chops
1/4 cup Tamari soy sauce
2 T. honey
1 T. finely minced garlic
1 1/2 t. sesame oil
2 t. finely minced fresh ginger
2 t. sambal oelek or sriracha sauce
1/4 t. black pepper
In a medium bowl, combine soy sauce, honey, garlic, sesame, ginger, sambal, and black pepper.
Place pork chops in a gallon-size Ziploc bag and pour in marinade. Massage bag to coat chops, close bag, and refrigerate for 1 hour or overnight if needed for later.
Prepare grill as needed and keeping temperature at 375 to 400 degrees.
Remove chops from marinade and place on a plate. Pour marinade into a small saucepan and heat to boil, reduce heat to medium and cook for 5 minutes. Do not use marinade as a glaze until it has been heated.
Grill chops for approximately 6 minutes per side, basting with cooked marinade after first turn. The internal temperature should read 140 to 145 degrees.
Tent pork chops with foil and allow to rest for 10 minutes before serving. Enjoy!
