Been a long day at work and now you’re wondering what to fix for the kids for dinner? Well I happen to have a ridiculously easy weeknight snack and/or dinner for everyone but music to a kids ears. Run by your local supermarket and purchase flour tortillas, grab sliced ham and shredded Chihuahua cheese. Behold my Ham and Chihuahua Cheese Quesadillas.
Years ago I had roommates and one day we were rummaging through the refrigerator for what to make quick and easy for dinner. It had been a rough day and the weather was bad. We didn’t want to order pizza because we knew it would take forever with the weather. We always had Chihuahua cheese in the refrigerator and tortillas in the pantry. So guess what we made? You got it, Chihuahua cheese quesadillas. Nothing like warm gooey cheese, am I right? Most of all, that tortilla with its crunchy texture is the best.
Ham and Chihuahua Cheese Quesadillas
So one night a friend and I went to dinner at our favorite Mexican restaurant. We ordered an appetizer and due to the fact I loved quesadillas, we ordered a ham and cheese one from the menu. Especially relevant to this recipe as a result of our appetizer, I had to start making Ham and Chihuahua Cheese Quesadillas at home. I will say I was amazed I had recreated the same taste. Now I am never without my favorite sliced ham and never without Chihuahua cheese.
Serve these quesadillas for game night, movie night, kids after school snacks, or a family fun meal with salsa and Mexican crema. These little devils work for a fast breakfast, too. Have the kids make their own tortilla delights. Share your ideas for Ham and Chihuahua Cheese Quesadillas.
Ham and Chihuahua Cheese Quesadillas
4 flour tortillas, taco size
8 baked ham slices, thinly sliced
1 1/4 cup shredded Chihuahua cheese
Butter-flavor non-stick cooking spray
Coat a large non-stick skillet with cooking spray. On one side of a tortilla round, place 1/8 cup cheese, two ham slices and another 1/8 cup shredded cheese. Fold filled tortilla in half and repeat with remaining tortillas.
Place filled tortillas, two at a time in preheated skillet over medium heat. Cook until toasty and lightly browned, about 3 – 4 minutes then flip over and cook another 3 -4 minutes until lightly browned. Remove and cut in half or in triangles for serving.
