What do you do when you have one apple, one pear and pie crust? I’m thinking a yummy quick dessert is in order. Why not make a Galette, a Honey Apple Pear Galette to be exact. This easy dessert comes together quickly for a last minute sweet treat or when you have extra fruit. Great for serving after dinner with family and friends or just for yourself. Serve with ice cream or whipped cream. Sometimes good food is staring us right in the face as you may consider this recipe to be a no recipe-recipe because any of your favorite fruits can be used.

So, what is a Galette? Click on ‘Galette’ for a short article from Fine Cooking magazine. In short, it’s simply flat-pastry or flat cake-like crust that can be either sweet or savory. A good example is adding cheddar cheese to a crust for an apple pie. It’s delicious if you’ve never had it. Galettes are not to be confused with a tart which are baked in a pan with a raised edge. Again, dough can be sweet and savory as well. Most relevant here, I’ve filled my Galette with fresh fruit flavored as I enjoy and I think you will, too.

To make this recipe, line a jelly-roll pan with parchment paper. Lay pie crust that has come to room temperature on pan. I refrigerate my crust to chill while I make my filling. Peel an apple and into small dices yet small dice the pear unpeeled. The skin adds a nice texture to the filling. Toss fruit with cornstarch, sugar, honey, salt cinnamon, and nutmeg. Remove crust from refrigerator and spoon fruit on crust, reserving any juices. Pinch edges of crust as desired spoon on any fruit liquid then brush crust with milk or egg wash. Dot the top with butter and bake until crust is golden brown and fruit is fork tender. Smells like apple pie!

A flaky sweet treat is ready to enjoy. I suggest serving just warm or at room temperature. A scoop of vanilla ice cream is the best yet whipped cream works for a lighter touch. This Galette is not over the top sweet so even the most apprehensive sweet eater will indulge. Use any apple you like but you may need to adjust the sugar amount. Bosc pears keep their shape are a perfect blend with apples. The honey is a nice addition for sweetness and of course, cinnamon and nutmeg are always in my apple pie.
One last note, experiment with any fruit and spice combination like strawberry and basil or maybe blackberry and cardamom. This recipe definitely should be added to your baking rotation because nothing could be easier to cure your sugar craving. Happy Baking!

Honey Apple Pear Galette
1 large Honeycrisp apple, peeled and small diced
1 Bosc pear, unpeeled and small diced
3 T. wildflower honey
¼ cup organic cane sugar
1 T. cornstarch
1 t. ground cinnamon
¼ t. ground nutmeg
¼ t. fine sea salt
1 T. unsalted butter, sliced
1 – 9-inch store-bought pie crust, room temperature
Whole milk or half & half, for brushing crust
Heat oven to 375 degrees and line a jelly-roll pan with parchment paper; set aside.
In a medium bowl, combine all filling ingredients except butter.
Place pie crust on prepared pan and spoon filling onto crust. Pleat crust to enclose filling and pour any remaining juices onto fruit.
Dot filling with butter then brush crust with milk.
Bake for 40 minutes or until crust is golden brown and fruit is fork tender. Juices may run and if crust is browning too fast, cover loosely with foil until done.
Serve at room temperature.
