It’s been a while since I posted something for you all because simply life tends to get in the way. Fortunately for you and me I love being in my happy place, the kitchen. So, today I bring you a new chicken recipe and might I add that it is a showstopper. My Honey Lemon Turmeric Glazed Chicken is so flavorful with the perfect amount of sweet honey, fresh lemon, and turmeric. Did I mention how tender this chicken is? While I used chicken thighs for best flavor, however, chicken breasts work well in this recipe if desired.

My husband and I are not picky eaters which is probably a good thing since I love to experiment. If you eat quite a bit of chicken like my family then you’re always looking for something new. It doesn’t take much to create a new recipe with chicken because of versatility. Almost any savory and some sweet combinations work well with the bird.

It’s easy to make this recipe and I think a great dish to impress and serve company. I start with coconut oil and I have found an without the coconut taste in all my food. Click on the brand I use in the recipe below. If you haven’t tried this brand, give it a try on your next trip to the market.

Next, coat chicken with seasoning and brown on both sides. Now mix honey mixture, pour over chicken, and bake until done. Remove chicken from oven and squeeze with lemon juice and sprinkle with chopped cilantro. Serve chicken immediately with your favorite side dishes like rice, roasted potatoes, a green salad with a lemon vinaigrette. Need I say “Delicious”.

Get ready to cook and impress and put this recipe on your meal rotation. Save time and enjoy the evenings with a fantastic meal with the family. Try grilling this chicken recipe using the honey mixture as the glaze and finish with lemon and cilantro after taking chicken from grill. There is no need to say anything else but enjoy!

 

Honey Lemon Turmeric Glazed Chicken

6 bone-in chicken thighs, skin on

3 t. turmeric powder, divided

2 t. fine sea salt

1 t. black pepper

1/2 t. ground coriander

2 T. coconut oil (I use Carrington brand)

1/4 to 1/3 cup clover honey

1 1/2 T. chopped fresh cilantro

Juice of 1 small lemon

 

In a small bowl, combine 2 t. turmeric powder, sea salt, black pepper, and coriander. Sprinkle seasoning on chicken pieces; set aside.

Meanwhile, heat coconut oil in a large oven-proof skillet over medium-high heat. Arrange chicken skin-side down, not crowding the skillet. Work in two batches if necessary. Cook chicken for 6 minutes or until skin is golden brown. Turn chicken over and cook another 6 minutes then reduce heat to medium.

Heat oven to 350 degrees. Combine remaining 1 t. turmeric with honey in a small bowl. Flip chicken to skin side up and pour honey mixture over chicken. Spoon sauce over chicken, coating each piece.

Place skillet in oven and bake for 15 to 20 minutes or until internal temperature reads 165 degrees. Remove skillet from oven.

To finish, squeeze lemon juice over chicken and sprinkle with chopped cilantro.

Serve hot with sauce and your favorite side dishes.

 

Makes 4 to 6 servings.
