“Lemon Coconut Rum Runner”

If you’re thinking, let’s get that Springtime groove back, well here’s a little something to put some pep in your step. Try my Lemon Coconut Rum Runner. With Mother’s Day around the corner, what a perfect refreshment to share with all Mom’s on their special day. This refreshing cocktail seduces you with flavors of the tropics with a punch from Coconut Rum. Prepared in a shaker, served in a tall glass or milk bottle as I used with ice combined with tangy lemonade, tart Sweet & Sour Mix, juice of 1/2 lemon, topped with a splash of club soda for fizz. Garnish your cocktail with a Maraschino cherry and lemon peel. A perfect toast to Springtime and to Mom. Think about serving this cocktail at your first Springtime barbecue featuring Coconut Marinated Shrimp and a crisp salad with all the fixins. Don’t mind me…I’m in a Springtime kinda mood. Lemon Coconut Rum Runner

2 to 3 oz. (5 T.) coconut rum

4 oz. lemonade (1/2 c.)

2 oz. sweet and sour mix (1/4/ c.)

Juice of 1/2 lemon

Club soda

Ice

Maraschino cherry and lemon peel for garnish

In a shaker, filled 1/2 with ice, add rum, lemonade, sweet and sour mix and lemon juice. Shake until beads form on shaker. Pour drink into 10 oz. tall glass; top with club soda for fizz. Add additional ice and garnish with cherry and lemon peel.
