Creamy Potatoes, Caramelized Onions, and Fresh Lemon Thyme

On to the recipe…choose potatoes of your liking. I used a combination of both red and yellow potatoes for this recipe. Cut your potatoes of choice in half and quarter an onion. Toss potatoes and onion with Olive oil, garlic, salt, and pepper. Place on a large piece of heavy duty foil sprayed with non-stick cooking spray on a baking sheet. Add potato mixture and top with butter. Close foil around potatoes and poke several holes in foil to allow steam to escape. Place pan on heated grill. When potatoes are tender, be careful of steam when opening foil. Add lemon thyme before serving and get ready for a flavor explosion.

Lemon Thyme Baby Potatoes in Foil

1 1/2 pound baby potatoes, halved (Little Potato Company)

1 T. Olive oil

1 small onion, quartered and separated

1 T. chopped garlic

1/2 t. kosher salt

Ground black pepper to taste

1 T. butter, sliced

1 T. Lemon thyme leaves

 

Heat grill to 400 degrees. In a large bowl, toss potatoes with oil. Add in onion pieces, garlic, salt, and pepper and stir to combine.

Place a large sheet of foil lightly coated with non-stick cooking spray on a grill-ready baking sheet. Pour potatoes onto foil and dot top of potatoes with pieces of butter. Fold foil tightly around potatoes and use a fork to pierce several holes to let steam escape.

Cook potatoes for 25 to 30 minutes depending on size of potatoes. Open foil and pierce potatoes for tenderness.

Remove from grill and sprinkle potatoes with lemon thyme while hot and serve.
