Dinner can be a chore and monumental task when feeding yourself and your family. Welcome to my Make Ahead Weeknight Meals – Menu Four where I take all the guesswork out of your weeknight meal planning. I’m offering you a scrumptious, delicious meal made easy. This menu is a no-brainer and one trip to your supermarket will have you licking your lips while shopping in anticipation.
The shopping list is simple as all you need is salmon fillets, Olive oil, and Paprika Lemon & Lime seasoning from The Gourmet Collection found at Meijer stores, TJMaxx, and online for Paprika Lemon-Lime Grilled Salmon. Purchase fresh tender asparagus for Lemon Pepper Roasted Asparagus making sure buds are closed and not dried out for the freshest vegetable. You may already have lemon pepper seasoning in your spice cabinet. Any variety will work but I use Lawry’s. so pick your favorite. Buy a container of Baby Spring Greens Mix for a side salad and Olive oil and balsamic vinegar for a quick and easy salad dressing. Your family is going to think you slaved a while creating this meal but I promise dinner in an hour or less. To prepare Paprika Lemon-Lime Grilled Salmon, rub salmon fillets with Olive oil and generously coat fillets with paprika lemon-lime seasoning. Cover completely until no surface of fish is visible. Heat your grill to 375 – 400 degrees then place fish on double foil or foil pan and cook minutes on each side or as desired. You’ve just made the most moist, succulent salmon on earth. This will be a go-to seasoning your pantry should never be without. Serve with Lemon Pepper Roasted Asparagus and Spring Mix Salad.

Preparing Lemon Pepper Roasted Asparagus is the perfect side for my salmon but is also delicious with any grilled or baked meat, poultry, and seafood. Wash and trim fresh asparagus (I like small stalks), placing on a roasting pan. Drizzle Olive oil over vegetable, coating completely. Sprinkle lemon pepper seasoning over asparagus and roast in a 400 degree oven for 15 – 20 minutes or as desired. Absolutely delicious and satisfying yet nothing could be simpler. Serve this meal with a Spring mix salad with a simple oil and vinegar dressing. Dinner is served!

Make Ahead Weeknight Meals – Menu Four
Paprika Lemon-Lime Grilled Salmon
2 – 6 oz. salmon fillets, skin-on or skinless
Olive oil
Paprika, Lemon & Lime Seasoning – Gourmet Collection Spice Blends
Prepare grill according to manufacturer’s instructions. Keep heat at about 375 – 400 degrees.
Rub each salmon fillet with Olive oil and then completely coat fillets with paprika, lemon & lime seasoning. No fish should be visible through seasoning.
Place salmon on doubled non-stick foil or a foil pan coated with non-stick cooking spray to prevent sticking. Cook salmon about 4 minutes on one side and flip over, cooking an additional 4 minutes. Cooking time may vary depending on sizes of fillets. Be careful not to overcook.
Remove from grill and serve with Lemon Pepper Roasted Asparagus.
Lemon Pepper Roasted Asparagus
1 bunch fresh asparagus, trimmed and cleaned
3 – 4 T. Olive oil
2 T. Lemon Pepper Seasoning or favorite brand
Heat oven to 400 degrees. Place asparagus on a large baking pan and coat with Olive oil. Sprinkle asparagus with lemon pepper seasoning.
Place baking pan in oven and roast asparagus for about 15 – 20 minutes or until desired doneness is achieved. Turn halfway through roasting as the asparagus browns.
Remove from oven and serve immediately with Paprika Lemon-Lime Grilled Salmon and Spring Mix Salad with Oil and Vinegar.
