Tilapia in Lemon Butter Caper Sauce is a quick and easy recipe prepared in 30 minutes or less. Add a couple of your favorite vegetables and dinner is served in about 45 minutes tops. Now that’s what I call quick and easy especially on a weeknight. Prep all your ingredients the night before. Planning ahead is the key to cooking quick, tasty meals with my meal plans. These simple tips make cooking a pleasure and put smiles on your families faces.

Start with fresh tilapia fillets. I used two fillets but you can double the sauce for four fish fillets if needed. Sprinkle fish lightly with salt and pepper. Place fillets in a baking dish of your choice and coat fillets with melted butter. Mix fresh lemon juice, chopped garlic, capers, oregano, and smoked paprika together in a small bowl. Smear this mixture over fish and place in 425 degree oven for about 10-15 minutes or until fish is flaky.
To serve, place on serving plates or platter if you have increased recipe yield. Spoon sauce over fish and serve with desired sides. I served my fish with simple baked potato and steamed broccoli with lemon pepper seasoning. Um, Umm…Good! Savory, citrusy, flaky fish, the perfect match, not to mention ridiculously quick.

Tilapia in Lemon Butter Caper Sauce
2 fresh tilapia fillets, 6 oz. each
2 T. butter, melted
1/4 t. kosher salt
1/4 t. black pepper
2 to 3 T. lemon juice
2 T. capers
1/2 t. dried oregano
1 t. smoked paprika
Sprinkle fish fillets with salt and pepper. Place fillets in baking dish.
In a small mixing bowl, combine lemon juice, capers, oregano, and paprika. Spread lemon mixture over fish. Pour melted butter over fish.
Place uncovered baking dish in oven and bake for 10 – 15 minutes or until fish is flaky.
Place fish on serving plates or platter. Spoon sauce over fish and serve with your favorite side.
Makes 2 servings. Carbs, 4.5 g.
Note: Recipe can easily be doubled to serve more.
