It’s a beautiful sunny day and feeling like Summer has arrived. Fresh fruit is in abundance right now. I recently purchased fresh mangoes and they are delicious. I have eaten at one least one every day for the last few days sprinkled with Chile lime salt. So refreshing… I needed to use up the last two I had and the first thing that came to mind was my Mango Margarita. How perfect on a day like today and especially since I love margaritas. Combine fresh mango, tequila, triple sec, sweetened lime juice with ice. Serve these Mango Margaritas in chilled margarita glasses rimmed with Turbinado sugar. So cooling on a hot summer day. Give one a try this weekend…heaven in a glass.
Mango Margarita
Mango Margarita
1 fresh mango, peeled and chopped (squeeze seed to release juice)
3 T. tequila
2 T. triple sec
2 T. sweetened lime juice
Ice
Lime slices, for garnish
Turbinado sugar, for rimming glass
Chill 2 margarita glasses and rub rims with sweetened lime juice. Fill a plate with Turbinado sugar and dip rims in sugar to coat; set aside.
In a blender, add mango, tequila, triple sec, and lime juice. Fill blender with ice. Blend cocktail mixture until smooth. Pour into prepared glasses. Garnish with a lime slice.
Note: For an added kick, sprinkle Pico Limon (Chile Salt with Lime) on top of cocktail before serving.
