Mascarpone Cheese – September Featured Ingredient

I have a new favorite, Mascarpone Cheese – September Featured Ingredient. We always think Mascarpone cheese, Italian cream cheese is just for Tiramisu. Let me tell you, NOT! It has 50% less calories than butter. Mascarpone cheese melts on top of hot dishes like butter but with a heavy cream, slightly sweet taste but light in texture with a tangy taste. Fabulous on bagels, spread on toast and sprinkle with cinnamon sugar. Works great on pancakes instead of butter or top maple-grilled peaches with a dollop and chopped nuts. Make a dip for fruit by mixing it with sweetened whipped cream. Mascarpone cheese is so creamy and delicious you will wonder why you’ve kept passing it buy in the supermarket. Trust me I felt the same way. Sometimes we can be a little slow that way.

Mascarpone Cheese – September Featured Ingredient is so versatile. You can even make your own Homemade Mascarpone Cheese. Very easy and delicious not to mention less expensive. You can substitute a high quality ricotta cheese or cream cheese its place. The closest relatives to Mascarpone cheese is English-style Clotted Cream or French Creme Fraiche. Mascarpone can go bad rather quickly so use it up within 5 days of opening the container but I have had it last a bit longer.

Try Mascarpone cheese when making pasta sauces, add to creamy soup recipes, stirred in your morning oatmeal or like I suggested before on top of pancakes like my Homemade Peach Pancakes.
