“Ooey Gooey Strawberry Cobbler”

Strawberries are considered a summertime fruit and I happen to agree. Even though strawberries are available year around they taste sweeter and fresher this time of year. Fresh strawberries can be used in many desserts and I’m bringing you a recipe I got from a friend. Not sure where she found it but let me tell you this dessert is delicious and just what the doctor ordered for any summertime barbecue. Bake up a pan of Ooey Gooey Strawberry Cobbler for your next outdoor bash. Full of fresh juicy strawberries and a ooey gooey cake-like batter baked to golden brown perfection.

This dessert is for kids and adults alike. No one will pass on a helping of such a delectable dessert. If at all possible serve warm and then top with whipped cream or my favorite vanilla ice cream. The ice cream gets all melty and irresistible. Just one spoonful will have you entranced. Your Ooey Gooey Strawberry Cobbler is best eaten the same day it is baked for best taste. Should you have leftovers, just reheat portions in oven to crisp up a bit. I highly doubt leftovers will be found. Anyway that’s how I like it but you decide.

Ooey Gooey Strawberry Cobbler

Need a quick dessert during the week, weekend, or a work potluck, give this strawberry, one pan dessert a try. People will think you spent hours in the kitchen when in truth the cobbler goes together quite quickly and easily. In the summertime, that’s my kind of dessert. Ooey Gooey Strawberry Cobbler

4 cups fresh strawberries, hulled and quartered

1 cup self-rising flour

1 ½ cups sugar, divided

1/4 t. ground nutmeg

1 cup 2% milk

1 t. vanilla extract

1/2 cup (1 stick) salted butter

Whipped cream or vanilla ice cream, for serving

Preheat oven to 350 degrees. Place butter in a 13×9 baking dish and melt in oven.

Meanwhile, in a medium bowl, whisk together flour, 1 ¼ cups sugar, nutmeg, milk, and vanilla. Pour batter into baking dish over butter and do not stir.

In another medium bowl, combine remaining ¼ cup sugar and strawberries, mixing well. Spoon berries over batter evenly.

Bake cobbler until crust becomes light golden brown and set, about 45 – 50 minutes.

Remove from oven and let sit 10 minutes before serving warm with whipped cream or vanilla ice cream.
